The dressing came out perfectly! Neither of our families put meat in our dressing so I left out the chicken. I don’t keep bacon grease so I used lard. I bet bacon grease would be yummy. I would have liked a boiled egg or two, but my hubby doesn’t like them. We like it sage-y so I added 2 tsps of poultry seasoning and 1 tsp of ground sage. I was worried that it looked too brothy when I put it in the oven, but it all absorbed beautifully! Tasted fantastic. Thank you for the very detailed recipe that was hard to mess up. Definitely a keeper!
I don't know if you understand the significance of what you've done here. If I make this and it is even a somewhat close approximation of actual cornbread dressing, I don't think it's an overstatement to say you've changed everything! The only thing standing in the way of a truly complete keto Thanksgiving meal, in my opinion, has always been the dressing. This is like a scientific achievement. You discovered penicillin!
James Fuqua I agree on the dressing being so important. This looks absolutely delicious but I grew up with a bread dressing. I now make a low carb almond flour, psyllium, coconut flour bread for mine. I bake, cube it and bake again until dried out. I then make it traditionally with celery, onion, butter, broth AND sage, poultry seasoning. Lol It comes out great and I am not missing out anymore on one of the best things about a turkey dinner. A little low carb gravy and it's heaven.

Wes Shoemaker! I took a chance and rolled the dice. And I am gobsmacked! As a southern boy myself, this was a recipe that was SURE to fall short. But I need to do as much low carb as I can to help control my LADA. I made this to go into my Aunt’s recipe for broccoli casserole. Now. Full disclosure. My dad was the one who liked corn bread and cornbread stuffing. I didn’t care that much for cornbread. I was a little smarty pants who thought he was too good for corn bread. I’ve since grown out of my nonsense but still cornbread is not my favorite. When I made stuffing myself in years past, I used a pone of corn bread and a tray of mom’s recipe biscuits (flour, fat and milk). And then everything else that goes in it. (No sage but no hard boiled egg either). And nobody ever said my stuffing needed “something” so THIS was a high hurdle to clear. I didn’t even miss not having the biscuits in there If you weren’t already happily married, I’d be coming a-courting’! This is fantastic. It’s different for sure. But it’s a great option. Everybody raved about the broccoli casserole and “this can’t be low carb!” This is how I try to live now. I acknowledge that wheat and corn flours are largely gone from my life. But my joy in food doesn’t have to be. And YOU and your channel, my friend, have helped me to embrace that. Thank you!! You rescued my thanksgiving. I was ready for protein shakes and cheese and crack slaw. And I love all that. But you kept my blood sugars in range and let me have a childhood favorite at the same time. And that is no easy task. Wes, OMG! Let me just say I don't know why it has taken me four months to try your recipe. Back when I saw the video I ordered my supplies from Amazon and told you I would make it soon and let you know how it came out. Well, life happens but last night I made it. I will tell you we have tried many Keto recipes from other places and basically have been let down. NOT THIS TIME! Man, you have nailed Thanksgiving in a dish! This is the best Keto recipe I have ever made except for my own hot wing recipe. When my wife and I tried this we both had huge smiles on our faces. I just made your Southern Cornbread dressing for our family ‘s Thanksgiving table it is Delish! I added a half can of baby corn. I blended them up and squeezes out the juice and added Amoretti corn flavor, and pork sage sausage. Thank you sooo much. Your recipes and recipes battles are always on point. Plus I love your humor!
Wish I had found this recipe earlier...will be my go to going forward. Meanwhile, raised up in Houston TX, I needed cornbread chicken dressing for Christmas dinner. I used my old southern cornbread recipe and substituted lupine flour for the corn meal. In the south, we don't add flour to our cornbread, it's straight up corn meal or go home. It came out decent, but it was missing the egg component. Lupine flour is controversial...would like your thoughts Wes.
I tried this recipe and this is spot on. The cornbread tastes is there for sure. In fact when I tasted it before I added the vegetables, I thought this could be my cornbread recipe alone. It's rustic but how I remember cornbread before Jiffy came along. Well done Sir, well done.

Funny, but I always put eggs in my dressing in the high carb days. I also put green bell pepper, sage, butter and poultry seasoning. Our dressing is very wet going into the oven and almost creamy after baking while it's still hot. This is an excellent base to start with and everyone can experiment and add their own spin (as we southerners always do) to make it taste like your mama made it lol. Thanks Wesley!

I can't wait to try this! I use fresh turkey necks and turkey wings in my regular dressing. I boil them until the meat falls off the bones but you can do the same thing with chicken. And I was raised that you can't make a good dressing without sage, thyme and poultry seasoning. I was born and raised in California but my Granny was from Louisiana. I better had made a moist dressing or boy that lady would fuss lol😂

Perfect timing! I just started looking for some low carb recipes for Thanksgiving dinner. This will be perfect. I have to admit that I'm a sage girl. I usually also add a little bit of poultry seasoning to mine and do sausage instead of the chicken so I'll probably go ahead and make those swaps. Yours looks good and I have all of the ingredients!

I love using turkey stock this time of year. I usually try to stock up when it hits the shelves. The cornbread dressing recipe turned out great though.

I so wish I had seen your recipe first. But now that I've seen you make this dish with such love and enthusiasm I have to try it myself. Almost just like my momma used to make it, except she would bake a whole chicken use the juice from the roasted chicken as the broth (concentrated flavor!)
Just made the dressing for Easter and it was delicious. It might have turned my non keto brother into Keto .I didn’t have the oat fiber because Amazon was late on my delivery so I added a 1/4 of a cup more of almond flour per a suggestion in the comments . Also I bought a rotisserie chicken from Walmart and made broth from that . It was moist and truly a new staple for Thanksgiving.

This is so similar to the dressing my mom and grandmother used to make. They made it with sandwich bread and used a turkey neck for the stock and the meat, but otherwise it's the same. And they didn't like sage, either. :)

You are amazing, I had a debilitating stroke, my caretaker husband does the cooking until I am stronger.... locally in private homes stuffing(farce) is the consistancy of gruel and dumplings are called slippery...they like wet...I am famous up here for stuffing, chili, and lasagna...anything I can add sausage, shrimp, crab, lobster or ground pork...and now chicken or hare, thanks to you, may be a few years before physical therapy will allow this, one of my goals...enjoy watching and listening, lost my accent...

I made this Monday with Turkey. The cornbread by itself is so wonderful. I had to taste it and it took everything in my not to eat a bunch. The dressing was so great. I'm a good, Southern girl in Kentucky, we eat dressing on the side, stuffing goes in a turkey. I prefer dressing on the side. I did not add the chicken as I cooked a big turkey. Hopefully this will freeze well as it made a huge batch. Another awesome video and recipe. Your channel is one of the things I am thankful for this year.
Missy G Woo hoo! 😜 I’m glad you asked. I was worried about the “reheatability” myself (because I loooove leftover dressing!!). I can report back that it reheats beautifully, but does become slightly more crumbly. But it tastes BETTER the second day after sitting in the fridge overnight. The flavors meld together just like “real” dressing!

Let me know what you think! You can certainly use Better Than Bouillon, but you still have to boil a chicken, so you’re gonna have chicken stock anyway... totally up to you.
WOW WOW WOW. I made the cornbread last night and the dressing tonight. Only I forgot to put the chicken in. Didn't matter, it still came out fantastic! That said, the cornbread is also TO DIE FOR. Especially after I left it on a cooling rack overnight. Today, it tasted just like the real deal. I mean, really! I seriously would have thought it was my mother's Kentucky cornbread. Oh, and I used the Amoretti flavor. WOW. Also, for those who don't have the whey protein powder, I left it out (and also omitted the half cup of water), and it came out terrific. Now I need to try the dressing with oysters, and then the green chile-pine nut version for the westerners in my family. WESLEY, YOU ARE MY HERO. I just cheated on Thanksgiving cuz I wasn't about to let a whole year pass without eating my grandma's famous dressing and chiblet gravy. Not to mention all the homemade pies she always makes. I've waited until the last minute (per usual) to buy ingredients for this to make for Easter. Is there anything you can substitute for the oat fiber AND protein powder? I realize it won't be the same recipe but that's almost 1 cup of stuff I would be leaving out. The dressing came out perfectly! Neither of our families put meat in our dressing so I left out the chicken. I don’t keep bacon grease so I used lard. I bet bacon grease would be yummy. I would have liked a boiled egg or two, but my hubby doesn’t like them. We like it sage-y so I added 2 tsps of poultry seasoning and 1 tsp of ground sage. I was worried that it looked too brothy when I put it in the oven, but it all absorbed beautifully! Tasted fantastic. Thank you for the very detailed recipe that was hard to mess up. Definitely a keeper!
with the corn flavoring, 1.8 teaspoon would make this absolutely scrumptious.
I don't know if you understand the significance of what you've done here. If I make this and it is even a somewhat close approximation of actual cornbread dressing, I don't think it's an overstatement to say you've changed everything! The only thing standing in the way of a truly complete keto Thanksgiving meal, in my opinion, has always been the dressing. This is like a scientific achievement. You discovered penicillin!

James Fuqua I agree on the dressing being so important. This looks absolutely delicious but I grew up with a bread dressing. I now make a low carb almond flour, psyllium, coconut flour bread for mine. I bake, cube it and bake again until dried out. I then make it traditionally with celery, onion, butter, broth AND sage, poultry seasoning. Lol
It comes out great and I am not missing out anymore on one of the best things about a turkey dinner. A little low carb gravy and it's heaven.

At Easter I had less than a tablespoon of dressing . Now I can make my own!! I have been watching diabetic friendly recipes for a week!! I want to say how much I appreciate y'all for taking the time to make these recipes and share with us. When I was first told I was a diabetic I thought I can never eat this and that again!! I was diagnosed in February of this year (my blood sugar was insanely high, bp through the roof, high cholesterol) and now, NOW I'm no longer categorized as diabetic!! Dr thought about putting me on insulin shots. NO!! Did change of diet first! Have dropped 1 of my meds and hope to be dropping the other soon.Keep it up! Looking at this once again, I’m wondering why you’re not on the Food Network or the Cooking Channel yet. We need to do a petition. There are NO low carb shows anywhere and you’d be PERFECT. So funny!
Wes Shoemaker! I took a chance and rolled the dice. And I am gobsmacked! As a southern boy myself, this was a recipe that was SURE to fall short. But I need to do as much low carb as I can to help control my LADA. I made this to go into my Aunt’s recipe for broccoli casserole. Now. Full disclosure. My dad was the one who liked corn bread and cornbread stuffing. I didn’t care that much for cornbread. I was a little smarty pants who thought he was too good for corn bread. I’ve since grown out of my nonsense but still cornbread is not my favorite. When I made stuffing myself in years past, I used a pone of corn bread and a tray of mom’s recipe biscuits (flour, fat and milk). And then everything else that goes in it. (No sage but no hard boiled egg either). And nobody ever said my stuffing needed “something” so THIS was a high hurdle to clear. I didn’t even miss not having the biscuits in there If you weren’t already happily married, I’d be coming a-courting’! This is fantastic. It’s different for sure. But it’s a great option. Everybody raved about the broccoli casserole and “this can’t be low carb!” This is how I try to live now. I acknowledge that wheat and corn flours are largely gone from my life. But my joy in food doesn’t have to be. And YOU and your channel, my friend, have helped me to embrace that. Thank you!! You rescued my thanksgiving. I was ready for protein shakes and cheese and crack slaw. And I love all that. But you kept my blood sugars in range and let me have a childhood favorite at the same time. And that is no easy task. Happy Thanksgiving! I know you made mine happy! Now if I can just resist eating the rest of this pan and blowing my portion control, I’ll be ok.

I meant to message you during Thanksgiving! This was ABSOLUTELY amazing-and I didn't even use the oat fiber since I didn't have any. I also used shredded turkey instead of chicken. I even loved the taste of the "cornbread" before turning everything into dressing! Kudos, kudos, kudos! Thank YOUUUUU!!!

Back when I saw the video I ordered my supplies from Amazon and told you I would make it soon and let you know how it came out. Well, life happens but last night I made it. I will tell you we have tried many Keto recipes from other places and basically have been let down. NOT THIS TIME! Man, you have nailed Thanksgiving in a dish! Wish I had found this recipe earlier...will be my go to going forward. Meanwhile, raised up in Houston TX, I needed cornbread chicken dressing for Christmas dinner. I used my old southern cornbread recipe and substituted lupine flour for the corn meal. In the south, we don't add flour to our cornbread, it's straight up corn meal or go home. It came out decent, but it was missing the egg component. Lupine flour is controversial...would like your thoughts Wes.
I tried this recipe and this is spot on. The cornbread tastes is there for sure. In fact when I tasted it before I added the vegetables, I thought this could be my cornbread recipe alone. It's rustic but how I remember cornbread before Jiffy came along. Well done Sir, well done.

Funny, but I always put eggs in my dressing in the high carb days. I also put green bell pepper, sage, butter and poultry seasoning. Our dressing is very wet going into the oven and almost creamy after baking while it's still hot. This is an excellent base to start with and everyone can experiment and add their own spin (as we southerners always do) to make it taste like your mama made it lol. Thanks Wesley!

I can't wait to try this! I use fresh turkey necks and turkey wings in my regular dressing. I boil them until the meat falls off the bones but you can do the same thing with chicken. And I was raised that you can't make a good dressing without sage, thyme and poultry seasoning. I was born and raised in California but my Granny was from Louisiana. I better had made a moist dressing or boy that lady would fuss lol😂

I love using turkey stock this time of year. I usually try to stock up when it hits the shelves. The cornbread dressing recipe turned out great though.

Just made the dressing for Easter and it was delicious. It might have turned my non keto brother into Keto .I didn’t have the oat fiber because Amazon was late on my delivery so I added a 1/4 of a cup more of almond flour per a suggestion in the comments . Also I bought a rotisserie chicken from Walmart and made broth from that . It was moist and truly a new staple for Thanksgiving.

This is so similar to the dressing my mom and grandmother used to make. They made it with sandwich bread and used a turkey neck for the stock and the meat, but otherwise it's the same. And they didn't like sage, either. :)

Just in time for Thanksgiving--thanks for giving me an alternative. I was gonna leave it out, now I don't have to. Ain't another keto cornbread dressing recipe, thanks brother! ...and, sage, cayenne pepper and course grind black pepper in cornbread dressing ALL DAY!!! We used bell pepper, chicken livers and gizzards in our chikn and dressing. You still rock tho...Oh yeah! now get busy on some sweet potato pie and eggnog...

You are amazing, I had a debilitating stroke, my caretaker husband does the cooking until I am stronger.... locally in private homes stuffing(farce) is the consistancy of gruel and dumplings are called slippery...they like wet...I am famous up here for stuffing, chili, and lasagna...anything I can add sausage, shrimp, crab, lobster or ground pork...and now chicken or hare, thanks to you, may be a few years before physical therapy will allow this, one of my goals...enjoy watching and listening, lost my accent...

I made this Monday with Turkey. The cornbread by itself is so wonderful. I had to taste it and it took everything in my not to eat a bunch. The dressing was so great. I'm a good, Southern girl in Kentucky, we eat dressing on the side, stuffing goes in a turkey. I prefer dressing on the side. I did not add the chicken as I cooked a big turkey. Hopefully this will freeze well as it made a huge batch. Another awesome video and recipe. Your channel is one of the things I am thankful for this year.

Missy G Woo hoo! 😜 I’m glad you asked. I was worried about the “reheatability” myself (because I loooove leftover dressing!!). I can report back that it reheats beautifully, but does become slightly more crumbly. But it tastes BETTER the second day after sitting in the fridge overnight. The flavors meld together just like “real” dressing!

Looks just like my mother and grandmother made it with the addition of boiled eggs and a little poultry seasoning with a healthy dose of black pepper! It might be April but I’m making this tomorrow!
I'm looking forward to trying this. Couldn't you have used a couple of tsp of Better Than Bullion? That would give me max flavor without as much liquid and only 2 carbs per tsp.
Let me know what you think! You can certainly use Better Than Bouillon, but you still have to boil a chicken, so you’re gonna have chicken stock anyway... totally up to you.
WOW WOW WOW. I made the cornbread last night and the dressing tonight. Only I forgot to put the chicken in. Didn't matter, it still came out fantastic!
That said, the cornbread is also TO DIE FOR. Especially after I left it on a cooling rack overnight. Today, it tasted just like the real deal. I mean, really! I seriously would have thought it was my mother's Kentucky cornbread. Oh, and I used the Amoretti flavor. WOW. Also, for those who don't have the whey protein powder, I left it out (and also omitted the half cup of water), and it came out terrific.
Now I need to try the dressing with oysters, and then the green chile-pine nut version for the westerners in my family. WESLEY, YOU ARE MY HERO. Love your videos, you are so charming and entertaining.

I just cheated on Thanksgiving cuz I wasn't about to let a whole year pass without eating my grandma's famous dressing and chiblet gravy. Not to mention all the homemade pies she always makes. I dont regret it in tha least even though Im barely getting back into ketosis. Hehe Thanks for all these great vids you are a life saver!
I've waited until the last minute (per usual) to buy ingredients for this to make for Easter. Is there anything you can substitute for the oat fiber AND protein powder? I realize it won't be the same recipe but that's almost 1 cup of stuff I would be leaving out. Any suggestions other than, "don't make it without all the ingredients"? lol We Alabamians need dressin' on Easter!
I can’t promise anything, but try substituting equal amounts of almond flour for the missing ingredients. Good luck and Happy Easter!!!

I am so glad you figured this out. I made another keto dressing for Thanksgiving and it was a disaster 🙃. Your recipes have never steered me wrong. I'm going to be trying this recipe for Christmas. I really missed having this at holidays. Thank you for all of your hard work. A holiday in the south just isn't complete without dressing
