I'm from Kerala and this stone pot is also found there. Generally the garam masala used in the stew (chicken or veg) is the typical kerala meat masala (it has no meat though only spice blend in different ratio) which is slightly diff than a regular garam masala. That actually makes a whole lot of difference in the taste of the stew. I wish I could make it once and offer it to you, so that you would know how incredible it tastes. It can also be prepared with mutton and we generally have it with bread too. We prepare stew for all functions....
Chef. There is a small restaurant which goes pre independence in a places called Hazra in calcutta … they serve the best stew I have ever savoured in my life …. If you go there u need to dig into it… it’s in Hazra next to the metro station enroute esplanade but on the opp side …
Thanks for the recipe, but why did you add the Vegs and chicken together. Won’t the vegs get smashed since chicken takes longer to cook. Is the tadka necessary? The onions could have gone in earlier. And the pot is super cool. Is it made of stone?!
Your recipe is so easy. But my fresh homemade coconut milk split (2 n 3 extract) when I was cooking ( medium-high heat) the vegetables n chicken…. How to avoid that
Varun, we also prepare Mutton Ishtu and Beef ishtu. You just need to replace the chicken with these meat. And for vegetarians, there's always Potatoes and Onion Ishtu. Whatever the ishtu, we relish it with Aappams or Idiyappams. Or even plain bread slices! Try it with bread! You'll love it!

I have NEVER seen mustard in a stew, we add garlic and onions before vegetables and never add tadka of mustard onions and curry leaves, After adding thick coconut milk add a few curry leaves, cover it with a lid and remove it from the flame. It's a simple recipe. Whenever these chefs make Kerala recipes, they make huge changes that actually destroy the taste. How can I follow their other recipes, who know they do the same with other recipes.

Varun, may be the people you learned it from call it "ishtu" but we call it stew only in general. Totally surprised me.
Entire Mid & North Kerala call it ISHTU.
ISHTU is the Malayalam colloquial term for STEW!
