- Learn how to make authentic Kerala Style Vegetable Stew at home from our Chef Smita only on Rajshri Food.
Kerala Style Vegetable Stew is easy to make, light on stomach, simple yet delicious on taste and absolutely healthy. Ideally it goes well with appams, but if you can't have it with appams, you can have it with steamed rice and it tastes yum! Try this simple and delicious curry at home and post your comments below.
INGREDIENTS
1 carrot cubed
1 cup green peas
2 medium potatoes peeled and cubed
1 cup of cauliflower florets
1 cup of French beans cut into 1”
2 medium onions sliced
5 green chillies finely chopped
1 tbsp ginger and garlic paste each
10 peppercorns
1” cinnamon
4 green cardamoms
2 ½ cups of coconut milk
¼ cup soaked cashewnuts ground to a paste
Few curry leaves
Salt to taste
2 tbsp coconut oil
METHOD:
- Heat oil and add the splutter the spices. Add the onions, chillies and ginger garlic paste and sauté till the onions turn pink. Add the vegetables and little water, salt and cook till the vegetables are done
- Then add the thick coconut milk, cashewnut paste and boil the curry
- Garnish with the curry leaves and serve with appams or steamed rice.

I made this recipe and it seems very authentic I'm from Kerala
This is a nice version but it's not authentic. In the real Kerala version there aren't any spices except for green chillies and ginger and nothing is fried. Everything is boiled together and oil is sprinkled at last.

boil cashews a little and then grid them with water

G Wij u can use roasted peanuts with skin removed
Actually there is no need for cashew nut paste at all. You could take a few of the cooked potatoes from the stew and mash them into the liquid - that will thicken it. Cashew paste is not normally added; the stew is meant to be of a liquid consistency.

@@chayawijy8170 you can add half a teaspoon gramflour and mix in water and add for thickening. It's optional

you can get it from lulu.. its a mud vessel.. keralites call it as mann chatti (mud pot/clay pot)

hello.. i think she has shown the easy way of doing it bcuz people like us who are not from kerala can get to taste the dishes of kerala.. maybe not in an authentic way.. but we should appreciate the fact that they are supporting the traditional dishes of our country.. :)
I agree on your point of view as well. However, we have to try and be as authentic as possible. :) At least in the greater appreciation for supporting traditional dishes of our country.

This is not the way of authentic Kerala stew.
In authentic stew you don’t hv to fry onion or add spices. You jus hv to cook all vegetables along with chilly, ginger juliennes & onion. Once vegetables cooked add coconut milk. Season with curry leaves & a spoon of fresh coconut oil
