It might not be USDA recommended, but as long as you trust your butcher and get a cut to prepare in your own home it's fine, so you should try a rarer cut than that: Rare or Blue. It might be worth it if you're re-evaluating what cut of steak you like, even if it's not like your getting a restaurant to give you a blue steak in America (or in the UK at that fact for me)

I recently worked a gig at Williamsburg savings Bank in Brooklyn NY. Literally right next to Peter lugers. I had a steak from them. Perfect medium rare. Well seasoned, great crust delicate and still tasted worse than pork or even a poorly cooked chicken.
Depends on the cut. More lean cuts like Filet will have the muscle fibers tighten if cooked to well done which cause the steak to be tough and chewy. More fatty cuts like Brisket have a lot of connective tissue which breaks down when cooked to well done which makes the steak more juicy and less chewy.

medium rare: well done edition
I recently worked a gig at Williamsburg savings Bank in Brooklyn NY. Literally right next to Peter lugers. I had a steak from them. Perfect medium rare. Well seasoned, great crust delicate and still tasted worse than pork or even a poorly cooked chicken.

Looks more medium than medium rare.
Depends on the cut. More lean cuts like Filet will have the muscle fibers tighten if cooked to well done which cause the steak to be tough and chewy. More fatty cuts like Brisket have a lot of connective tissue which breaks down when cooked to well done which makes the steak more juicy and less chewy.
