Leaving your steak out to rest at room temperature has absolutely nothing to do with the crust you achieve 😂. If anything, it provides a more even cook throughout the steak, but even this has been disputed through experiment by several food experts.

It is fine in a regular container for about 2 days in the fridge. Maybe a bit longer if everything is really fresh.
