You can see the cardboard sitting on top of the cakeboard at around 7:41 They also put some wooden or plastic dowels in cakes with many levels - quick flash at 8:18 - more at 9:37
Here's a real cake challenge: No gluten, dairy or soy within a cake. I'd love to see what people can make with a cake with all those three ingredients not included in a cake. (I can't have those 3 listed things, I'd be nice to see something being made without gluten dairy or soy..)

I think they make the cakes just for the videos and then eat them themselves. I'd hope that if the cakes were for the generally public then they would follow proper protocols.

No, I agree. I'm not big cook, but I always put a hairnet on when I'm cooking especially for relatives. The most embarrassing thing would be to find hair in the food. Kind of turns you off.
No, sometimes it's hard to work with gloves on. We all eat in restaurants and God only knows what goes on in the kitchen or what they're doing with their hands. They say we all eat a pound of dirt in our lives anyway.
