rewatching this episode....love it so much! Lou: I use a cheese KNIFE to cut my potatoes because that knife has a hole in it and so no pressure and not sticking when cutting potatoes. If you need more info I can send you a picture if you want of my cheese knives (I have two) Tomorrow, I am making split pea/ham soup! SO GOOD.....make it in the crock pot. Today, we cut up the left over Easter ham ... carrots, onions & celery for the soup so tomorrow morning, after I rinse the bag of split peas...I can combine with garlic and bay leaves plus the ham water from boiling the ham bone and put in my crock pot.

I work nightshift at the HCA Kingwood ER, and I have to agree.. we get people in from Plum Grove and then we get people in from “Plum Grove”!! Some of the most critical patients we get is from “Plum Grove”! Y’all stay safe and don’t forget we have one of the top “snake Drs” in the Nation.. hope y’all never need us, but.. we’re here!
Nothing better than filet mignon. Used to buy a big piece of filet and cut it up into steaks and roasts and then freeze. Now it’s so expensive. I may have to splurge because it looks so good.
Y’all fancy this week. Shopping at the fancy store and cooking your fancy beef! I do agree with you about Walmart. My mood always changes when I have to shop there LOL. Lou, a little tip for you: if you dampen a paper towel and spread it under your cutting board it will keep it from sliding on you. I also got some of that rubber shelf liner stuff and cut a piece the size of my cutting board and put it under it. Works like a charm! Thank y’all for this yummy recipe!
If y’all are gonna keep on with the recipes you can buy small bottles of cooking sherries and wines. They really really add a deliciously different taste to the recipes. So worth it! ❤
I made this recipe for lunch today (Saturday) and it was amazing. My dad is 93 and has dementia and I usually have to stay after him to eat his food, but not with the last two recipes.

Looked really delicious. Love Tips and Gravy. You always remove beef tips from the pan once cooked while you fry the veggies and make the base. Otherwise the beef becomes overcooked and tough. Wine is a major ingredient in beef tips and adds tons of flavor. Alcohol cooks out of it. Dirt cheap bottle is just fine and you can save what you don't use in the fridge to use in another dish. Burgundy or Sherry adds the best flavor! You can use a much more inexpensive cut of beef. Chuck roast works well because it has great marbling. Just cut it up and marinade it overnight in a bag and that will tenderize it and add flavor. Kroger marks down their meat from the day before right away in the morning along with many other fresh items like taco dip, bakery items, seafood etc. If you show up within a half hour after they open you could probably pick up that filet mignon for half price!! Eat like a king for less! ☺️❤️

My mom use to make this meal in the crockpot for years. One day she made it on the stove and it was the best ever. After that we never had the meal in the crockpot (unless we were going to be out later). This is actually one of my favorite meals. We eat ours over egg noddles.
As usual, y’all have made a delicious meal. Job well done Dan and Lou. For future reference, always cook your onions about 3-5 minutes before adding the garlic. It has a quick cook time and will end up burning and become bitter tasting. 😊
I don't mind if beef is pink in the center but if it is slapped in the pan on both sides and the cow can still lick you....forget it 😆 nice aprons and cutting boards. Cast iron skillets are great to cook, bake and saute in. Dan your not listening to her lol. Ya might want to get you some wooden kitchen utensils for the cast iron skillet, it makes the food and flavors stay consistent. A plastic spoon or spatula changes the flavor as it sits. I learned that along time ago. It looks good, I would add some rice. Good cooking Dan and Lou!

Dan and Lou foods looks yummy filet mignon looks 😚 Amazing, quick tip learned years ago, put a wooden spoon across boiling pot of water,potatoes you name it and the wooden spoon prevents the water from boiling over. Just a suggestion, it works for me every time I'm cooking boiling water ect. Hopefully that little tidbit will help ya"ll out. Take care and keep these videos coming. Hey ya'll, if you don't want to use wine you can use chicken stock or broth. Beef broth is sweet so if you use it you may need to add a little water. I use chicken broth or stock in place of water because it gives extra flavor. When I make brown tips I put a can of mushroom steak sauce with a lot of garlic & the chicken broth. Beef tips, green beans & mashed potatoes or you can cut the potatoes into chunks & add to the gravy, lower the fire to medium & put a lid on it & cook until potatoes are done. If it becomes too thick just add water or the stock or broth. 😊

I forgot to add this to my comment but just a tip for Lou when using the starch and water to thicken her gravies as she saw with her second batch she made. If you make your starch and water a little bit thicker it doesn't take as much to get your thicker consistency. I love how you both are learning so much... you two rocking it 🤘💜
Another help from an 80 yr old lady: put water and flour or corn starch in a jar. Put lid on and shake well. Never any lumps and no stirring. Been doing that for years! Perfect every time.
Me too Rebecca… I now use the jar for mixing everything dry or wet… for gravy-bring up to a boil, then simmer to desired thickness, ( if using flour slurry, simmer a few extra minutes to take away the flour taste )
@@vickyyoung4438 you obviously know how to do that. That flour needs to definitely cook a bit. I use flour 99% of the time. Been cooking brown and white gravy for 70 years.

Dan, I thought you would want to know that it isn't good to cut raw meat on a wooden cutting board as bacteria from it can seep into the wood and you can never get it totally clean and you could contaminate other foods and get really sick from that contamination! A non-wood cutting board can be placed in the dishwasher and safely decontaminated in it. I say this with love for you, Lou, and your family and I am not trying to be a P-Pat! 🙂

Looks very good, somewhat like a Beef Stroganoff where you use egg noodles rather than potatoes! It's a favourite here in our house!
Hey ya'll, if you don't want to use wine you can use chicken stock or broth. Beef broth is sweet so if you use it you may need to add a little water. I use chicken broth or stock in place of water because it gives extra flavor. When I make brown tips I put a can of mushroom steak sauce with a lot of garlic & the chicken broth. Beef tips, green beans & mashed potatoes or you can cut the potatoes into chunks & add to the gravy, lower the fire to medium & put a lid on it & cook until potatoes are done. If it becomes too thick just add water or the stock or broth. 😊

I forgot to add this to my comment but just a tip for Lou when using the starch and water to thicken her gravies as she saw with her second batch she made. If you make your starch and water a little bit thicker it doesn't take as much to get your thicker consistency. I love how you both are learning so much... you two rocking it 🤘💜
Another help from an 80 yr old lady: put water and flour or corn starch in a jar. Put lid on and shake well. Never any lumps and no stirring. Been doing that for years! Perfect every time.
Me too Rebecca… I now use the jar for mixing everything dry or wet… for gravy-bring up to a boil, then simmer to desired thickness, ( if using flour slurry, simmer a few extra minutes to take away the flour taste )

@@vickyyoung4438 you obviously know how to do that. That flour needs to definitely cook a bit. I use flour 99% of the time. Been cooking brown and white gravy for 70 years.

Love your cooking shows! Y'all are so much fun to watch and I love your recipe sharing! Dan, I thought you would want to know that it isn't good to cut raw meat on a wooden cutting board as bacteria from it can seep into the wood and you can never get it totally clean and you could contaminate other foods and get really sick from that contamination! A non-wood cutting board can be placed in the dishwasher and safely decontaminated in it. I say this with love for you, Lou, and your family and I am not trying to be a P-Pat! 🙂
