Vegan Clafoutis: So Delicious, You Won't Believe It's Plant-Based!

    Ingredients:
    ½ cup aquafaba
    1 cup soy milk or oat milk
    1 tbsp white vinegar
    ¾ cup all purpose flour
    1 tsp vanilla extract
    ½ tsp salt
    ⅓ cup sugar
    3 cups banana and strawberries chopped
    ½ cup chocolate chips
    Instructions:
    Heat oven to 350°F.
    Make a “buttermilk” by adding vinegar to the soy milk in a separate bowl and set aside for 1-2 minutes, allowing it to curdle.
    Chop up banana & strawberries into small pieces and place in a bowl. Mix with chocolate chips. Into a greased pie plate, spread the fruit and chocolate mixture into one even layer. Set aside.
    In a blender, add aquafaba, “buttermilk” (or soured milk), flour, vanilla extract, sugar, and salt.
    Pour this batter over the fruit and chocolate chips in the pie pan. Baking in the oven for 45-55 minutes. The cake tester should come out clean (even though chocolate may cling to it) and the batter should feel firm as you are poking the tester through.
    Cool for 10 minutes before serving.
    Notes: You can use frozen fruit such as cherries or mixed berries. You can also use apples or whatever fruit is in season. You can add a ¼ tsp cinnamon or nutmeg or even ½ tsp of almond flavouring.
