Love the recipe! Do you use rapid rising or active yeast? Also, if one cooks instant mashed potatoes instead of from scratch, how would you get potato water?

Yes, you can use sweet potatoes but it will change the taste.

I use active yeast and I would stick with real potatoes not instant. It is worth the extra effort.
