  • This simple rice bowl is packed with flavor & freshness, beginning with the spinach & cilantro rice! Topped with taco flavored meat (or substitute chicken) and your favorite toppings, it is dinner in a bowl!
    Rice Ingredients
    1 ½ cups chicken broth
    1 cup milk (can substitute with all chicken broth)
    1 ½ cups fresh spinach
    2/3 cups lightly packed cilantro
    1 ½ cups whole grain brown rice (can substitute long grain white rice)
    1 tsp. salt
    3 T butter
    1 T olive oil
    ¼ cup minced onion
    Directions
    Pour chicken broth & milk into blender and add cilantro & spinach. Blend until greens are thoroughly chopped.
    Melt butter, olive oil and add onions and salt. Stir in rice and mix well. Add contents of blender and mix well.
    Cover and let cook on medium heat for 20 minutes. Uncover, (rice should be at lightly boiling) stir gently, reduce heat to simmer and cover for an additional 20 minutes - or until most of liquid is absorbed. Uncover and stir. Turn off heat and let sit covered 10-15 minutes.
    Brown a pound of hamburger meat and add favorite taco flavoring.
    Add your favorite toppings to your rice bowl: beans, tomatoes, avocado, cheese, sour cream & salsa.
