Is still don’t know the difference between convection and TRUE convection! Is it just the fan in the back comes on in true convection and not in convection?

True convection has a heating element in the fan area so it's blowing in heated air. Convection had no heating element by the fan so it's just blowing around the hot air in the oven.

Question, Would the "Broiler" with Convection "Fan" on both at same time be considered like "Air Frying" ??? Because I have seen ovens (when shopping for them recently) some say "Convection" some say "True Convection" and some say "True Convection w/ Air Fry" And I never thought about it, until you were just going over the diff options and mentioned the Broiler w/ Convection Fan running. Or am I just completely Off Base and if so can you explain what would be different then about an oven that has the "Air Fry" option?

If ordinary convection blows the heat from the bottom everywhere in the oven, why would heat coming from behind the convection fan spread the heat more evenly?

Because it's the heating element's position. when you are baking multiple racks in an ordinary convection, the bottom rack will be hotter than the upper racks

Yep, anything with air circulation/movement is typically good for dehydrating.
