They are different, though. The basic "they have certain esthetics, they both drink alcohol, they ride around on griffons" is pretty surface level. The earthen are loyal to a fault, are extremely lawful and stunted emotionally. Dwarves are fiery, fierce and much more chaotic. Earthen don't sing. They put on the same 6 horrible plays every 6 hours. They have no tribal culture, just oathkeeping or oath breaking, but even oathbreakers are very stoic and titualized. They dont paint themselves with warpaint and go screaming on the back of a griffion mercing trolls. They dont make a thousand deals with a thousand angry elementals to gain supreme power. They aren't curious or obsessed with history. They're barely sentient. And their culture, i feel, is imposed on them by Dorn.
Was it ever confirmed that these Earthen were actually afflicted by the curse of flesh? I mean geographically speaking they're the furthest from Yogg Saron, it's possibke they were a tiny bit affected but it definitely seems like they mostly got away from it

And additionally, their culture I believe developed after they were left orphanned by their watchers' demises and then even though they were still mostly following their programming, since the awakening machine broke down, I guess they were faced with the new dilemma of "you only got one life, make it count" which lead to this sub movement of those earthen who abandoned their edicts and thus developed personality in the process.
Much more likely that the earthen are essentially AI, and that culture and free will are either anomalies or inherent parts of beings that need to be intelligent. Basically: smart things develop culture, and require a form of free will to act. In short: We're all flesh robots. They're just stone robots. Don't think any curse of flesh affected these earthen btw

The group of earthen that would become the dwarves were the ones who followed Archaedas and Ironiya to Uldaman. The earthen of Khaz Algar were in communication and direction of Archaedas. These two species share many roots with one another. It also is to note the earthen were made from the earth and minerals of Azeroth. It is common knowledge that Rams and Gryphons enjoy mountain and aerie places. This links them to the earth, which the Earthen are made of (and later the Dwarves). We also know the C.o.F (Curse of Flesh) was designed by Yogg Saron (and used by all the Old Gods) but it is not without clear reasoning that its effects and affects of the curse would bring out or even keep these traits active within Earthen and Dwarveness. Its their (earthen and dwarves) nature to be connected to such habits. They nurtured this and happened to create similar societies. Look at the human and the vrykul. Very similar. Though, maybe its just my anthropology major talking. xD

tbf, if you develop a culture, alcohol is one of the founding things such races can make. humans make it, elves make it, dwarfs make and inhale it like water. tho the beard thing is a tad weird cause its, literally copper wires.

Without giving spoilers it's the same thing with trying to make us bond with one particular earthen only for him to die, completely unnecessarily when he could have thrown his weapon or literally used his Griffin, so they could replace all of the male leadership with females. I'm trying so hard to enjoy retail but god damn the story is so pitifully done and the agenda that is being shoved in your face is so ridiculous it just really detracts from the whole.

No. Creators of the Warcraft universe read too much Tolkien way back and their understanding of dwarven culture was cemented like that. Grand bearded, noisy heavy drinkers addicted to mining, smithing, mountains and rams. These concepts of today's elves, dwarves even orcs heavily shaped by Mr.Tolkien's books.
