as a boy growing up in Canada in the 1950's and 60's my mother made a variety of pastries with meat fillings saying it's what her mother made for their family. I visited Scotland recently and went to visit where my grandmother was born in the late 1800's, Arlynlea cottage in S. Whitehills, Forfar. Visiting Forfar I realized why meat pastries played such a big part of my childhood. As I travelled Scotland and mentioned my Forfar roots the almost universal response was "ah bridies"

Some I never had, some I have tried when I was there for a few months. I had to look up suet, and I'm not sure we have that here in the states, but we have lard, which doesn't have as much flavor.
Talk with your local butcher shop. Here in the states we have often bought suet to make our own blend of birdseed suet, for winter feeding of our feathered friends. I haven’t purchased it for human consumption, but there’s no reason you couldn’t! Every state has local USDA approved butchers. Look near where cattle and sheep are raised, also where deer hunting is popular.

South America needed people to work the mines. The best miners came from Cornwall. They brought Cornish pasties to south American and these became empanadas over time
I haven’t had a bridie since I went to Scotland in 06. I just made your recipe and they were amazing! Just a good as the bakers in Galashiels! I also used your pastry recipe and Wow! Best pastry I’ve ever had. Definitely will be using it to make my thanksgiving day pies with! 🏴 just need to learn how to make haggis! Haggis is so good!

Remember these from my childhood in Douglastown (just outside Forfar). I remember them having lots of white pepper in them.
