Having learned to make enchiladas from my grandmother who learned from her grandmother who grew up in Mexico, this is a pretty damn good enchilada recipe. My only problem is that she always said red sauce should only be used with beef, and that chicken enchiladas are much better with a tomatillo-based green sauce, with undipped tortillas because chicken and corn tortilla taste so good together you don't want to cover up the corn tortilla flavor by dipping it.
I'm mexican, and where I live, red enchiladas like these are as common as green enchiladas. In fact, the enchiladas sold by the majority of local restaurants are mainly done with red sauce. I think it strongly depends on the region where you order them.

I'm from Puebla and I'm so happy you love Chile poblano. You should try the Chile en nogada is really good if you do it right and for dessert a Mollete poblano is a sweet bread fill with coconut, pineapple and creme with a sweet crust.

Te quiero! We mostly make "foreign" food with what we have in the US, and we always try to push a dish to new heights, unbounded by tradition. I almost universally prefer the non-traditional version of dishes. I think our ancestors would have made it differently if they had then what we have now.

Unlike several dishes where you have to eat one whole dish in one sitting, Mexican cuisine makes individual servings per dish that invites you to eat as much as you'd like. Very optimal for meal preps!

@@erinb4237 Yeah I think they got the "suiza" part from the cheesee. In some places they are served in a chese sause similar to the one he makes in this video, but in most places that I've ordered "enchiladas suizas" they're just some random whatever sauce enchiladas with molten cheese on top

I know someone has to have mentioned this, but I'm gonna do so anyways. The seeds of peppers do not have any heat at all. The heat mostly comes from the white ribs inside the peppers. I have tried eating the seeds by themselves from some fresh jalapenos (both from the store and from my garden), and they have little to no heat, even when chewed significantly. The white ribs inside, which I've tried eating by themselves from both store bought and home grown jalapenos, are quite spicy. The green flesh does have some heat, but not nearly as much as the ribs.
Interesting to see another recipe! I just made my Mexican mother in laws’s recipe today with tomatillos, Serrano peppers, jalapeño peppers as like the base of my flavor for my sauce and mozzarella cheese and it’s delicious !

Fun fact: “Wahaka” is actually spelled Oaxaca. The best Mexican cheese made from Oaxaca, Mexico 🇲🇽
And all over Mexico its called Queso Oaxaca, but inside Oaxaca its called "Queso hebras" (stringed cheese), it's taste is more milky than mozarella

@@erinb4237 Yeah I think they got the "suiza" part from the cheesee. In some places they are served in a chese sause similar to the one he makes in this video, but in most places that I've ordered "enchiladas suizas" they're just some random whatever sauce enchiladas with molten cheese on top

Well, dinner was a Smashing Success....That Sauce was "out of this world" although I think I used too many peppers; however it still turned out fantastic...… Babish, you Sir are a Genius when it comes to recreation and believe me it IS EVERY BIT AS GOOD AS IT LOOKS ! I know someone has to have mentioned this, but I'm gonna do so anyways. The seeds of peppers do not have any heat at all. The heat mostly comes from the white ribs inside the peppers. I have tried eating the seeds by themselves from some fresh jalapenos (both from the store and from my garden), and they have little to no heat, even when chewed significantly. The white ribs inside, which I've tried eating by themselves from both store bought and home grown jalapenos, are quite spicy. The green flesh does have some heat, but not nearly as much as the ribs.

Interesting to see another recipe! I just made my Mexican mother in laws’s recipe today with tomatillos, Serrano peppers, jalapeño peppers as like the base of my flavor for my sauce and mozzarella cheese and it’s delicious !
