- In this recipe I'll show you how to make a whole Peruvian Gold Chicken on the Pit Barrel Cooker. The Pit Barrel chicken recipe couldn’t be easier. We’ll split the whole chicken in half and brine it overnight. The next day, apply some chicken seasoning, hang in the Pit Barrel and then finish with Tobago Keys Peruvian Gold Grilling Sauce. This might be the best chicken I've ever eaten!
Brine Ingredients
• 1 gallon water
• 1 cup Kosher salt
• ½ cup brown sugar
Chicken Ingredients
• 1-2 teaspoons olive oil
• 2 whole chickens
• 2 tablespoons Runnin Wild Poultry Seasoning, more info here www.armadillop...
• 6 oz Tobago Keys Peruvian Gold Grilling Sauce, more info here www.armadillop.... This sauce is a great sauce for fish or chicken. Ingredients include Sugar, Yellow Mustard, Water, Apple Cider Vinegar, Light Brown Sugar, Tomato Paste, Worcestershire, Salt, Pepper, Herbs, and Spices.
Recipe Instructions
1. Mix the water, Kosher salt and brown sugar in a large pot until dissolved.
2. Cut the chickens in half, pace in the brine and refrigerate overnight.
3. The next day remove the chicken from the brine and pat dry with paper towels.
4. Rub the olive oil over the chicken, then season with the Runnin’ Wild Poultry seasoning.
5. Insert the Pit Barrel hooks under the breast bone and hang the chicken in a pre-heated Pit Barrel Cooker. I added 4 pieces of Mulberry Wood which provides a sweet, fruit-wood flavored smoke.
6. Smoke the chicken in the Pit Barrel Cooker for 1 hour, then insert a temperature probe if you want to monitor the temperature. This chicken was at 148 degrees F in 1 hour.
7. When the chicken reaches 160 degrees F (for this cook it was 1 hour 37 minutes), remove from the Pit Barrel Cooker and glaze with the Tobago Keys Peruvian Gold Grilling Sauce.
8. Hang the chicken back in the Pit Barrel Cooker until the internal temperature reaches 165 degrees F in the breast. For this cook, the total cook time was 2 hours.
9. Remove the chicken from the Pit Barrel Cooker and let rest for 10 to 15 minutes.
10. Serve!

I did a whole chicken in the PBC with this sauce... oh my. I know why they buy it by the gallon. Soooo good! Thanks for the video!
I love this sauce Brandon. Glad you liked it!
It’s pronounced “Too Bay Go” as in Trinidad & Tobago. That sauce is the BEST. Wow.
Much love and support from Tampa Florida! I will be ordering a gallon of that sauce for sure! God bless and congrats with the grand baby’s
Thanks for the fun fact and thanks for watching!
I live in a small Fla town, has a peruvian restaurant, that food is delicious !!! ..menu is superb
Rock on to a Florida Bro!
Oh yeah the Pit Barrel is a chicken cooking machine no doubt. Loved the video. Very nicely done.
Thanks friend!
I intended on getting a PBC a couple months ago but still haven't pulled the trigger. That chicken looks really good! Thanks for the Tobago Keys sauce tip.
Im about to buy my second. Such a great investment.
Hard to beat the PBC for chicken. It's a great cooker.
Very nice cook.
Thanks. We really enjoyed this chicken.
Congrats on the grand baby! I need to get that shirt you're wearing for my hubby. Lol! Your chicken looked delicious 😋
Cooking with Cricket (cricket516) Thanks Cricket. Donna can't stop holding him. My daughter got me this shirt. You guys have a great weekend.
Ordered that sauce yesterday. Going to make the same on my barrel smoker as well thanks :)
We love this sauce
@@Armadillopepper did you cut chicken in 1/2 then brine, or brine then cut 1/2?
You can do it either way, but cut them in half first. That way you won't need as big of a pot for the brine.
Congratulations to the new Grandparents! Best of times.
Thanks Chuck....this is so awesome, you can give them back to their parents if they get fussy :)
Perfect. Brother
Thanks Double D!
I said you were the chickenmiester, and now World's Greatest Farter, I mean Father. PBC is such a great cooker. Love the sauce. Beautiful chicken. I'd love to compare that sauce with the CHS here in Florence. May need to place an order. Nice cook grandpa.
Farter....father....sounds like you're splitting hairs. Thanks a lot Phil and good luck with VA Tech this weekend.

Here We Go Round The Mulberry Bush... Chicken turned out great... Pit Barrel does chicken right.. made a Carolina gold mustard sauce with pretty much the same ingredients... more yellow being mustard is the main ingredient... Thanks!
Sounds good Chris. I agree, PBC makes great chicken.
Subscribed! Great video!
Thanks Mike. PBC is a chicken smoking machine.
@@Armadillopepper I have one myself. I tried out this recipe and it came out delicious!
Doing a collaboration cook tomorrow to be released Tuesday morning. Decided to go with hanging and smoking a chicken in the WSM pit barrel style. Watched this vid again to get in my head what I want to do. That Peruvian Gold is some good lookin sauce.
I'll be looking for your new vid
Congrats on being a new grandpa! Well I took the plunge and purchased the PBC from a local BBQ store. Hopefully it compliments my Masterbuilt well. I did a dry run last night with no meat, just charcoal, followed the instructions and only lit about 40 briquets in my chimney, etc. My thermpro said it was up to 400 degrees at one point! I will need to play around with it to figure out how to get it around 250-300 degrees. Granted there was no food in there but 400 is WAY too hot. I'm pretty sure I left the coals in the chimney too long, going to shorten the recommended time and maybe close the damper a little bit more. Going to jump in head first this weekend and smoke a brisket flat and a chuck roast (poor man burnt ends), can't wait!
Thanks and congrats on your new PBC! Sounds like you'll have some fun this morning. When I first started using mine, I was definitely lighting too much charcoal. Let me know how your cook turns out this weekend.
Congrats on the grand baby. I wish I could try that chicken. When I lived in Jax I always grabbed the Peruvian sub from Angy's in Jax beach. Good cook
Thanks. I haven't been to Angie's...will have to check it out.
Beautiful birds!
Thanks Big Lew. PBC does a nice job on chicken.
excellent chicken looks great.
Good looking yard bird there...
Many thanks
I just placed an order, can't wait.
Oh wow and thanks! Make sure to let me know how you liked your stuff.
Hello. Very delicious looking chicken. Never had the sauce but I'm sure it made the chicken soooo goood ! We use to have barrel cooker when I was a kid where Dad smoked fish all the time. Thanks and have a great weekend ! :)
One of my favorite chicken recipes. I see a smoked fish video coming! Have a great weekend Paivi.
congrats on the grandbaby, that is some fine looking chicken
doublejbbq Thanks. The grand baby is easier than kids! Chicken was great.
Congrats on the baby. :)
Great looking chicken too :)

Nice looking cook thank you for sharing
Hey Charlie, Thanks for watching our video and taking the time to comment. Have a great weekend.
Gotta order some Peruvian Gold.
Bob Evans Hey Bob, This sauce is delicious. I have learned that restaurants in our area use it also.
Love the shirt!
Thanks Jeff. My daughter gave that to me.
Congrats on becoming grandparents! If I had known how great grandkids are I would have had them first! Why don't you try some Tsang's for the binder? It's awesome, and I'm not just saying that because they sponser me! I bookmarked this and I will be trying to copycat it! Rock On Jeff!
You are spot on about those grandkids. You can give them back when you're tired! I do use the Tsang's sometimes. Got some a while back after watching you.
Thats one thing I havent tried on my PBC. It looked great
Gotta try it Lyle. I've done 2 chicken recipes and they turn out great.
Really nice color! Can only imagine the flavor! \m/
This was some of the best chicken I've smoked. Thanks my friend and have a great weekend.
That's awesome!!
Thanks Keith. We really enjoyed these.
Thank you for Subscribing, and you have a good weekend as well
LOL...love that shirt!!!! Chicken looks AWESOME!!
My daughter bought it for me. She also got me one DADD.....Dad's Against Daughters Dating. Have a great weekend Cheryl.
Great job
Anthony Goines Thank you Anthony.
When I saw the PJ pants I went to look for a different recipe haha
Go Cats!
Damm that looks good 👍. Love them grandbabys
Their awesome aren't they? Just give 'em back when you are done playing with them 😁
What shorts are those?
Old man shorts. Dunno the brand.
Great! I’ll check it out. Did you make that smoker?
No, it's a Pit Barrel Cooker.
Congratulations on the grandbaby! But please don't start him/her on ghost peppers! Will be doing this on my Pit Barrel this weekend.
JP Sureau Gotta start out on jalapenos and work your way up! Thanks and let me know how your chicken turns out.
In Seen that sauce at Publix I think 😀
Awesome recipe but I would only do a half a cup of kosher salt myself. I followed this recipe and some parts were on the salty side but overall had a great cook.
Thanks. Did you wipe off the chicken good? I always use 1 cup Kosher salt to 1 gallon water (which is a pretty common brine ratio).
ArmadilloPepper.com yes I did. I plan on trying it again this weekend with half of cup of salt and I'm gonna see how it turns out
Don't feed the little one too spicy when it's older ;) Congrats!
I'll plead the 5th on that one 😄 Thanks and have a great weekend Debbie.
You have a video on how to make your smoke barrel?
It was purchased. Brand is Pit Barrel Cooker.
How long once the coals are lit do you wait before you put the chicken in? When the coals are heating up do you leave the top lid on or off while its heating up?
Leave the lid off until the fire gets started. Time can really vary, but typically 15 or 20 minutes. Once the fire starts to die back and some coals are asking over the put the lid on.
Great vid, how’s the inside of your smoker holding up? It looks like the paint is pealing off. Or is it soot? Thank you
hollernathan Holding up good. Paint is not peeling, but there is some build up.
I just love my Pit barrel. But what was the other meat you were hanging in the PBC when you put the chicken back in after glazing?
Tri Tip. That video will be published next week. Thanks so much for watching and have a great weekend.
ArmadilloPepper.com awesome, love yalls videos. I'll be having some soon. Keep up the great work
What diameter is your PBC? Looking a Amazon they have an 18-1/2 inch version. Thanks.
Hey Mike, I believe they only make one size 18.5. It's on their website for the same price I think, www.pitbarrelcooker.com/product-category/pit-barrel/
Congratulations on the new grandbaby! Have I missed it somewhere? Where can I get one of those Barrel smokers? And what is the hottest sauce that you have. I went to some chicken place that had a contest if you ate all the hot wings then you got the meal free. I asked for a sample to see what it was like but the flavor was so wonderful I could not see why somebody would just gouge themselves.
Thanks Jim! Just google Pit Barrel Cooker and their website will pop right up. Price includes free shipping and it arrives pretty quick. Hard to say which one is the hottest with no extract. These are dfinitely super hot: Puckerbutt Carolina Reaper, Hellfire Fear This!, Irazu's Carolina Reaper 70 and Wicked Reaper Carolina Reaper Hot Sauce. Of course the Carolina Reaper mashes are even hotter. They are all on this page: www.armadillopepper.com/collections/carolina-reaper-hot-sauces
Have you smoked chicken without brining in the pit barrel? If so how did it turn out! Thank you
Yes, but I injected the chicken. That video is here: ruclips.net/video/pAvFbi7AjMo/видео.html. I always brine and/or inject chicken when smoking. In my experience, it makes a big difference.
Congrats on the grand baby. Jeff that looks so good yummy nice glaze. Jeff i think we are both breast men lol. Awesome cook and taste i can see it in your face :)
+Survival Mindset It's a brotherhood!
nice
+Stacey Story Thanks Stacey. It sure was tasty.
bought a bottle , very strong , cut it with vinegar and water ??? maybe some grapefruit ??? any other suggestions very good flavor just too sweet
Robert Mistretta You could try Sprite or 7 up also.
You could also use beer or wine.
I like your T shirt lool
Thanks Bolt!
I think the PBC does chicken better than anything else. I don’t use mine for ribs much anymore but it’ll sure cook some yard birds.
+Wayne Swicegood Totally agree.
ArmadilloPepper.com Enjoy them grandyounguns. It’s a good thing you can’t skip children and go strait to grandyounguns. If it were possible... my children may have never happened!
That was funny!
Why dont you use it for ribs? I thought it would have been ideal for ribs. What do you use instead of the pbc for ribs? Asking since I was literally about to place a order tonight for one and the reason why because I liked the idea of hanging ribs.
Mars Hall We do use it for ribs. Have a look at our Bone Suckin' Ribs video on the Pit Barrel.
What makes it Peruvian other than the label on the bottle?
The name of the sauce is Peruvian Gold.
What temp did you have the grill- smoker?
Melvin Smith Good question. I didn't check, but this Pit Barrel usually runs 300ish.
What happened to the steak 🥩 did the chickens eat it
That's a different video 😁
Likewise, congratulations on the new grand baby. You old farter, luv the t-shit, uh, shirt. OK, I'm gonna look into the PBC a little closer now. Been thinking of getting another smoker but the komado types are just too $ for my budget. The chickens looked great.
The Kamados are expensive. I don't think you will be disappointed with it. My daughter got me that shirt! Nobody told me grandbabies were easier than kids!
At 1 min 38 seconds you mention another kind of oil but I still can't make out what it is you are saying.
Help please.
thanks
+m Day Tsangs oil. It's infused with garlic and onions and is available at most grocery stores where we live. Vegetable or olive oil will work just fine in this application.
Sorry to spoil it and I’m not being a hater but that’s not Peruvian chicken or pollo la brasa as it’s called. It’s just grilled chicken looks great though.
Hi Leon, Agreed it is not Peruvian chicken as made in Peru. The name of the sauce is Peruvian Gold. We do have a video of authentic Peruvian chicken on our channel. Please watch it and let us know if it's close.
“I’m a breast man” jajajaja
how is this peruvian? I don't get it!.
The name of the sauce is Peruvian Gold Grilling Sauce
and the idea of the smoker is of Peruvian origin
Happy New Year Ram!
Not a single thing wrong with children, tasty skin and good chicken. Fartin' if you have to.
Thanks Oren. Hope all is well!
What happened to the Peruvian steak😂
Hey Tommy, we do have an authentic Peruvian steak video on our channel.
