🥂PORK JOWL WITH RUBBING SHRIMP PASTE: Season pork jowl with sesame oil, pepper and fish sauce then grill it for 8 minutes. Plate with fermented chili paste, rubbing shrimp paste, herbs, green mango & fermented shrimp.
🥂COW SMALL INTESTINE X MISO YUZU HOLLANDAISE: Season the chopped small intestine with a fermented paste mixture. Grill it for 5 minutes and stick it in the rosemary branch. Place it in a container made from a grilled onion. Top up with miso hondae foam & pepper.
🥂AUSTRALIAN OYSTER: Cut open the oyster. Put it on a bowl full of stones, add oyster cream, apple and lime on the oyster. Add some zest and top with apple foam.

As a chef I can relate to fine dining, but when I cook for myself or if I go out I prefer comfort food and street food. Especially in Southeast Asia. It might be challenging to run a fine dining restaurant in a place where street food is so good and has its vibrant culture.
Don't give so small portion if you want more costumer in restaurant.

The idea of small courses and a tasting menu is to be able to enjoy a multitude of flavors and dishes and the biggest thing of all your taste buds do not get bored since you are constantly getting new flavors. I always said I had a fine dining appetite but on a taco bell budget. Learn to make some of this stuff at home and you will save a fortune. The experience is still amazing though if you can afford it, not something I can do very often at all, been years since I went into a fine dining restaurant. These days I rarely eat out and cook at home.

Even 9 bags of potato chips will fill someone up equivalent to a meal. It is pretty reasonably priced for what it is imo. Each plate was under $10 for something that you could almost never replicate at home or find anywhere else.

If you add up all the food over the courses that is easily over 1300 calories of food alone not including whatever you might be drinking. You really shouldn't eat more than that for a meal and if you do perhaps you should think about changing diet habits.

Its for the experience! In a decent restaurant if you get a tasting menu, you will get many small portions. It could be anywhere from 10 to 25 plates, not including canapes, petit fours. You also usually get 2 or 3 desserts! If you are not full from a tasting menu, you are either a sumo in training or its a bad restaurant...
Thuyen and Sonny are the best combo on his channel. He's so witty and silly and she laughs at everything and is so happy and energetic. Love these food adventures!
Long is pretty good too, he’s a good sport.

Been to fine dining several times just for the kicks, and I can say the price tag is due to taste experience and art, and maybe premium ingredient where applicable. Even though they gave out stuff in really tiny portions, for some reason, I was almost full by the end of the course. I guess the way the chefs structured the course and ingredients have some gastronomic sense .
Actually, if your food is jam packed with different kinds of flavour, you feel fuller even with small portions. Salt and sweet slathered in grease makes you crave more of it (yes, very similar to alcohol) and so you need larger amounts to feel full.
Yeah it take 20 min for the stomach to realise its full....so guess what...they make you wait for your stomach to realise its full

Its because you slowly eating those tiny portions. You can accomplish the same at home with nasty food. Just eat small portion (like 2 spoon full), wait 5 minutes, eat another 2 spoon full etc. - after the 5th or 6th time (around 30 minnutes later), you're not hungry anymore. Especially if the food is fatty/oily.
We have just learned bad habits nowadays of shoveling tons of food in our mouth in a very short period of time, especially high on carbs/sugar, which you can eat more of it, than fat and protein.
Been a few times and the getting full feeling is due to being tired out of waiting for every meal to come.

I remember my mom taking me to a fine dining restaurant, for the first time, on a trip when I was six years old. The portions were so small and I was so hungry that when they brought my plate out I started crying.

Aldi might be known to be a bargan grocery store, but they don't cut costs with the food itself. Their sourdough for example is actually really fucking good.
Company man has a good video on where they actually cut costs, but essentially it's with employees, diversity of products, the quarter cart system, and no bags.

I did one fine dining tasting menu like this. There were 6 of us. 11 courses. By course 8 three out of our group were full. After that dinner we walked it off and wanted to drink more, but nobody was still hungry.

Also, as said in the video, fine dining is a form of art, not just visual, but also gustatory (taste). I can understand this, because Sonny said he tasted savoury, smoky, sour, and all sorts of other flavours.

@@ghostlyflamingo07 as someone who appreciates different kinds of arts I appreciate the effort and love put in gastronomy, some fine dining seem like a scam but other genuinely look like they had some thought behind what they do. I'd say is for people that want different experiences and are easily bored with normal day to day life stuff
First, my largest tasting menu was in Lima Peru at Central and it was a 17-course meal with wine pairing. We were eating like 3 and a half hours haha.
Now about the video.
I worked in several fine dining restaurants around the world, and I can say that most of the price is for the experience that the restaurant needs to create for its customers. It could be very costly to manage and run a restaurant like this, where people spend between 2-3 hours eating. The staffing on shifts, design, plates (oh plates are so expensive), and the food too. As you said the chefs are trying to your premium ingredients like organic or sustainable products, but those things can run costs so quickly.
This is also something sad because the economy of scale with the globalization that we went through with products made in other countries cost less on the market than local sustainable produce. The big producers are slashing prices and make it so difficult to rely on local products where prices sometimes fluctuate so much. Also, the lack of understanding of people on what is going on behind the nice tablecloth, lights, the open kitchen does not make it easier.
Hopefully, you will make some sense in those videos. Just watches this one and the food looks great and lovely. Also, the 4K makes it AMAZING!!!

This is so so educating and entertaining at the same time.
haha, this reminds me of our fine dining in Korea, which cost almost $500 with about 15 courses. But sadly, we did not really enjoy it since it was a European style kind of food. We sat there for almost 4 hours begging them to stop bringging out the food. LOL....One of the biggest reason why the portion is that small, is because of the quantity you would have. 1 course looks small, but having 9 courses or 15 courses would definitely fill up your stomach. So my advice is, if you want to try out a fine dining experience, make sure to choose the food that you love, don't just go try any fine dining food for the experience.
The reason most consumer don't like the idea of such small portions is probably like me they assume that one plate of food is all you get for that price, I had no idea it was a, "tasting menu," where they keep bringing out different items to try, that does make it more worth the money.

Both mentalities have their own place in my heart. Sometimes what I want is volume, like I'm just trying to fill my gaping maw with tasty food, but sometimes I want to just experience something that I couldn't have even begun to think of. While I love to cook and "invent" my own recipes and stuff I recognize that it is a skill to take ingredients that may seem common and crank their qualities up a few levels. That is what you pay for in a fine dining restaurant and that is what you should be going in expecting. In my opinion if you're gonna be going to a tasting, do not go with the mindset "I'm here to get full" because that isn't the goal the chef has in mind. If you wanna get food to fill you up, go to a cheap spot with tasty food, if you want to see how far people have gone in experimenting with food, then you want to go to a culinary tasting.
Fine dining charges for the location, atmosphere, ingredients, staff, and tools used to make it. Like making flavored foam and umami false caviar droplets out of truffles and stuff takes actual expensive scientific equipment. It's expensive because it's supposed to be a special experience and it's small for the same reason. It's pretty much an embodiment of "you can have too much of a good thing". You don't want to over indulge just because it was good, or else you'll think it should be the norm which by definition it can't be if it's supposed to be better.

Used to do some fine dining stuff a time ago, usually it was set out in tasting plates 3-5-8, not really large in themselves but they were quite labour intensive to make, I use to hate pate but grew to like it and tartare after tasting it every other day making it.
It's more a show of skill and quality from the kitchen than quantity, and with 5 small plates you could still end up full.

You pay for the experience and atmosphere. Then fast food afterwards.
Paying for years of experienced chefs to make dishes with high end ingredients and pushing the boundaries of what we see as food. Sous & Executive Chefs who don't really cook every night but they create these dishes and orchestrate how they are made & that execution starts with their minds and then everything has to be going just right to be successful. Starts with an idea & then goes into ordering the food & other items needed, making sure the delivery has everything, make sure the other chefs know what they are making as well like prepping items for the dishes, how everything with be set up for service, how everything will be cooked, how everything is plated, garnished, & what each dish has going with it. It's a big challenge & it takes a lot of work, dedication, & execution. Everyone has to be on the same page. Ive done it @ a country club on a private island off the coast of NC. So....your paying for all that going into your dishes when you do fine dining & a lot of things I haven't even touched this is just a general outline kinda lol but the creation part is something not everyone can do and then take it from there to a plate once and then again and again, and usually not just one night, sometimes though, but a week, a month, the season, who knows every restaurant does things their own way.
I think why they emphasize the etiquette while eating at "Fine Dining" is because so we can feel full even if we ate a small portion of food. When I child, my grandfather told me that if I be patience and do the proper posture and gesture while eating, that's the meaning of enjoying food and you will become full faster. And I think that is also the culture of why people in Asia like Japan, China, and Korea use Chopstick to eat and sometimes they use small bow and small portion so that they can be patience and do the proper posture, resulting the condition of full at eating.
I'm Asian but not from east Asian, and sorry for my bad English. This just my opinion though

@@UBvtubernope, not just west, but I think all over the world. And I don't want to say it "too much", but "more than Fining Dining". Well, I am from part of Asia that majority have the culture to serve a big portion of food (like buffet food). So what I am saying is, MAYBE the reason why you should have and do the etiquette ( even the man in the video didn't know about the etiquette at first) while eating fine dining, is to make you feel full faster even if you are just eating a small portion of food. Maybe you can try to eat while do that etiquette and find if you will feel full faster? I had tried it and I think it's work 😅.
