If you want to fight the wither, go to a nether stronghold ( which I have been in) and collect three wither heads by killing them. Withers spawn in the nether. Get soul sand and set it up like an iron golem. Put three heads on the soul sand
each one has a portal but they all go to the same end that way you could take a chest make a shelter, and i also advise taking a piston and a red stone torch, when you try to move the egg it will become an item you can keep in memory

If you look at the Ender Eye description on the wiki, you'll notice it says that it takes you to the closest stronghold. I think every stronghold has a portal though not all strongholds are the same size and have them on the same place. You can explore a stronghold for an hour and still not finding the end portal frame while it''s still there by which I mean somewhere else in the same stronghold
You got REALLY lucky with your spawn, 2 or 3 storngholds spawn in a world and a Minecraft worlds, is equal to the size of Jupiter, you got lucky finding 2 with in the same 1000 or so blocks
Multiple strongholds spawn in the pc version because the world goes from +29000000 to -29000000 on both x and z coords. so that's 58000000 blocks on the x coord and 58000000 blocks o the z coord. 58000000x58000000= 3364000000000000 blocks. That's 3364 trillion blocks and I'm not even counting height

I believe trading emeralds for diamonds would be overpowered.

The stone bricks that take you longer to mine in survival mode are the silverfish monster eggs

There is always an end portal. However it is pointless to find it because there is only one end.
Withers don't spawn in the nether, wither SKELETONS do. It's not a nether stronghold, it's a nether FORTRESS.
2 strongholds that he has found.... the 3rd one has yet to be found.

There IS an End Portal in every stronghold, just some portal rooms don't spawn with an entrance

You can still summon the Ender Dragon, with /summon ender dragon, but that would (sort of) be cheating.
There are 3 strongholds in each world and portals in all of them.
it gives more of the item you mined... like if you mined cobblestone, instead of it giving you one, it would get you two...
