    Easy Mexican rice recipe is really easy to make at home recipe. This Mexican rice recipe is perfect to satisfy your tastebuds. You can checkout Salsa sauce recipe to pair it up with Mexican rice.
    1 Cup Basmati / long grain rice
    3 big Tomato's puree
    2 Finely chopped onion
    1/2 Cup Boiled Corn
    1 Small Capsicum Finely chopped
    1/2 Finely chopped Red bell pepper
    2-3 Finely chopped Spring onion
    1/3 Cup Boiled Kidney Beans
    2 Tbsp Finely chopped coriander leaves
    2-3 Tbsp Finely chopped Jalapeno
    1 Tbsp Butter
    1 Tbsp Tomato Ketchup
    1 Tbsp Ginger garlic paste
    1 Tsp Oregano
    1 Tsp Chili flakes
    1/2 Tsp Red chili powder
    1/2 Tsp Black pepper powder
    2 Tbsp Oil
    Salt to taste
    Preparation Time : 10-15 Minutes
    Cooking Time : 10-12 Minutes
    Total Time : 25-30 Minutes
    Serves : 2-3

    *I AM MEXICAN and we prepare it totally different from this recipe, the ingredients are added in this order:*
    • Over medium heat fry 2 cups of rice while stirring until golden.
    • Add a medium onion and 2 garlic cloves, finely chopped or minced and fry, mixing 3-4 minutes more until the onion is transparent.
    • 1 ½ cups chicken stock
    • A cup of tomato puree
    • *Optional: two carrots and a diced celery stick, ½ cup of peas and ½ cup of cooked corn kernels.*
    • Season with salt only (not cumin, pepper, oregano, catsup or beans)
    • Mix well, lower the heat, cover and let the broth consume and still be slightly damp (15-18 min) without moving it again. And ready!!! 😋

      This is the authentic style of cooking by Mexican people. But we Indian people have modified the cooking style and also added some Indian spices. I know Mexican rice includes chicken stock etc but most Indians are vegetarian and prefer vegetable stock. But I prefer Mexican, European and continental dishes to Chinese dishes because China has always been a threat to India . As a result I appeal every Indian to boycott Chinese recipes, trade goods and everything.
