How to Cook Bitter Leaf Soup with Cocoyam (Ofe Onugbu)

  • Bitter leaf soup can be made with various ingredients such as cocoyam or waterleaf. The cocoyam is a special ingredient that serves as a very good thickener for this soup. It can be served with fufu, pounded yam, semolina or eba.
    Ingredients:
    1 Kilogram meat (goat or beef)
    3 Tablespoons of grounded crayfish
    4 Scotch bonnet peppers
    2 Cups of washed bitter leaf
    10 Pieces of medium cocoyam
    One Stockfish head
    3 Medium size Smoked fish
    Traditional seasoning ingredients (Ogiri/Okpei)
    Palm oil (20cl)
    1 large bulb onion
    3 Seasoning cubes
    Salt to taste -
    2 Cups of shelled periwinkles, optional

      No, there won't be any need for that, those spices will change the taste of the soup

    Please can I cook with locust beans iru in yoruba language because I'm not igbo.

      Though I have not tried it with iru, bit have used okpei to and it was still nice like that. There is always a first time

    Sorry to ask, in the absent of coco yam and ogiri base don seeing them might be very difficult here what else can someone use in replacement of coco yam and ogiri? Thanks

      Cocoyam flour can be substituted you can skip using ogiri or you can go for fermented locust beans. However, I can only suggest other thickeners for making soup: achi, ukpor

      You should only use the edible type and not the itchy type. It works too.
