Oh my gosh a blast from my past CKLW I listened to every night going to sleep when I was 11, from Lexington Ohio (near Mansfield)! Loved that radio station. I’m 64 now.
Thanks Kevin!!!!!.... I grew up in Highland Park, and JL Hudson was a huge part of my childhood. I went on to get my Bachelors Degree from Oakland University, and worked at Hudsons in the buying office. The Maurice Salad was a huge part of my daily lunch routine dining in The Riverview Room on 13. I now live in the mountains of North Georgia. I prepare this salad for friends. They are amazed at the dish as well as my stories about Hudson’s. I have an oil painting of the store hanging in my log cabin. Such wonderful memories. Thanks... Chuck Andrews.
You're very welcome, Chuck! Nice to meet a former employee of JL Hudson's! I remember that beautiful dining room on the 13th floor! It's wonderful that you keep the JLH tradition alive and share this incredible salad with your friends! Thanks for letting me know!
THANKS so very much for remembering JL Hudson. As a former "Hudsonian" I worked for Hudsons as an Asst Buyer, and I opened Novi/Twelve Oaks. I was recruited by Macys and moved to Kansas City/Macys Midwest. On to Atlanta to work for Rich's, and most recently an HR Manager for Belk. One dept store Macys did not absorb and ruin. After all my positions in Department Stores, none can compare to JL Hudson, and the wonderful, iconic foods served by Hudson's. Bravo to you!!!!!!!!
So glad you liked the episode, Chuck! How lucky we were to have Hudson's such great memories and it's wonderful to hear from someone who actually worked there!! It was one of the greatest stores ever! Having Hudson's-style food every once in a while helps to take me back! Thanks for watching!
my mom made this salad in the 60's from the social media of the day, live radio call in shows. she followed her recipe to the letter and swore it was identical. i have that recipe somewhere in the cook book and files from her kitchen. but we made this so much i can do it by heart.
Hi Toy - I wonder if your mom got the recipe from the "Ask Your Neighbor" radio program. The host was Bob Allison and they did a lot of recipe sharing on that show. Thanks!
You guys are awesome!!!! Thank you.. I have so many beautiful memories of Hudson's & their restaurant with my Mom,, thank you .. Now I can make the meal for myself. I'm a older woman & I we would also go to the Mayflower if you remember that restaurant,, I had my first cup of coffee.. My Mom was so good to me I miss her so much, thank you for listening 🤗💕🤗
Hi Rose! Thank you for watching! Glad this brought back fond memories of Hudsons! I remember the Mayflower but don't know if we ever ate there. Having that first cup of coffee! I remember mine and I felt like a grown up!! Thanks!
Wow! This was fun! I had that CKLW album and what memories...the music, the food from Hudsons...thanks for keeping Motown alive in our hearts, minds and tummies :)
This looks delicious. I will have to try it. In MN, we had Dayton Hudson's department stores (gone many years now... so sad) and a big treat was when my mom would take me downtown Mpls. to shop at Dayton's, then we'd go to the Sky Room restaurant on the 8 floor for lunch! I would always get a burger... mom probably had a salad similar to what you made here (she was always on some sort of diet... but she would sneak some of my fries!😊)... such sweet memories. Thanks for sharing. You two are so fun to watch, I've made quite a few of your recipes and have never been disappointed!
Hi Michael! Thanks for watching! I heard many wonderful stories of Dayton's in Minneapolis. I'm sorry I never had the chance to go there. I miss the grand old downtown department stores. The Sky Room sounds great!
My mom just passed unexpectedly and my dad and i live together bc my iilness. My brother comes over every Saturday for family dinner. This week soup and THIS Maurice salad. I wish Macys still selled the bottle of dresing but stooped due to Covid. Hudson's was always a delight. Thx for the video as my cookning and baking are very challenged. Take care and stay safe😍
When i was young and into my adult time we went to Oakland mall. Got a seat by the open view with waterfall. I removed the Mickey mouse Sunday's. You can also make this a pasta salad as Macy's did in re latest yrs.
Hi Amy - sorry about your mom's passing. Hope you enjoy the soup and Maurice salad! We often ate at Hudson's, especially when we were kids and were at the big downtown store, but we would also eat at Northland and Westland stores, too. Thanks for watching!
Found your channel recently and I love it. The reasoning behind tearing lettuce rather than cutting with a knife is that the latter will cause the edges to turn brown if not consumed right away. (or so I was told when I complained)
Thanks for the Maurice salad recipe. This was my favorite salad from J L Hudson. They would serve it with a really good warm roll too. I'm going to try your dressing recipe. I would also listen to CKLW while getting ready for school "Brandy what a fine girl..."
Wow Kev......that salad looks delish... love the history lesson as well. Have a new friend from Detroit....I will certainly make this for him as a surprise!!! You guys are a delight to watch.....Enjoy!
Thanks for the great recipe- Mmm! I will try it! Regarding iceberg lettuce, my mom (South Dakota girl) would use a leaf of lettuce as the base for potato salad. While is was mainly decorative,, for presentation, the lettuce added a nice crunch to the potato (sometimes macaroni) salad . Thanks again! 😀
This brings back memories of our local Department Store O'Neils & Company. Their restaurant had a similar salad with shredded swiss & cheddar cheese plus mini shrimp. You had a choice of dressings or the house dressing that was a vinaigrette that had hints of roses to it. Years later learned it has rose water concentrated in it.
OK, you did it again, I'm starving!! Definitely will have to try this!!! I actually love pickles in my salad even though everyone else questions me for doing so.... Thanks so much for sharing a childhood memory!! This was fun!!!
while Ralph's camera skills have improved over the years his love for a good pun has been constant, "Romeo and Julienne"?....nice. Detroit was also famous for fried frog legs in the early 1900s but I'd rather "croak" than eat those. love the salad guys, a real crowd pleaser!
Your channel is fantastic. It stymies me why you have only 10k subscribers. You should have over 1 mil. Maybe consider a youtube marketing company? I think your great. Now even more than ever since the cavalcade museum is complete with studio. You guys are fantastic!!!! Thank you for your content
Hi Jake - thank you much for your comment! We like to think we have an "exclusive following" after doing these videos for 10 years! LOL! I don't think we will ever have a million subscribers, but that's ok because the ones we have are the best! Thanks!!!
You've given me so much inspiration! I am having carpal tunnel surgery tomorrow and will be spending the next week binge re-watching your channel while I recuperate! I can't wait to make this salad and the cheese soup. I'm wondering about the soup, how does it freeze? It's just the two of us most of the time and I'm thinking I might have to 1/2 it. Anyway, hope you have a fun Memorial Day weekend. Can't wait for the next video!
moon lily I hope your surgery went well and you are recovering! Get well soon!! We had a bit of the cheese soup leftover so I put it in the freezer. Freezing it does a couple of things - it changes the texture...it's a bit lumpy and it's very thick, so I thinned it out with some more chicken stock and milk. The taste was still great, but it didn't have the smoothness. I would half the recipe instead of freezing. Thanks for watching, and wishing you a speedy recovery!!
I don't remember chunks of egg in that dressing. I loved their Maurice salad and probably wouldn't have if it had chunks of egg that big. I always ordered it without gherkins too.
Hi Scooter! All the Hudson's here in the Detroit area has restaurants, and I think they all had different names, but the menus were the same. My fondest memories are those when I was a kid and we ate at the elegant dining room at the downtown Detroit's Hudson's on the 13th floor. The Maurice Salad was on the menu there. Thanks for watching!
I have always heard it is not so much cutting the lettuce, but the metal in the knife that is the problem. It tends to cause the lettuce to turn brown. If you use a plastic knife you will achieve pretty much the same results as tearing the lettuce.
Hi Jean - I've heard the same thing, it's the metal that turns the leaves brown - a chemical reaction. I got a plastic lettuce knife years ago that I also like to use for when I'm cutting things in a non-stick coated pan because it won't scratch. Thanks!
How did you manage to get the EXACT recipe? I've tried with several great restaurants that are no more here in Houston over the years and never got a recipe. Even with a restaurant that was owned by old family friends...... no go.... they're taking it to the grave.
2packs4sure This recipe was published in the Marshall Fields Cookbook (they took over Hudson's in the early 1990's) and then it was published in the Detroit Free Press. I've known restaurants that won't share recipes, so it can be a challenge! Thanks for watching!
Cavalcade of Food Wow what a gift to have had that published, I'm definatley trying this one. ~~The dressing especially tickles my fancy. ~ I really enjoy your channel and i've done your Swiss Steak a few times now and it's always great. Thanks
Your last two videos got me looking up J.L. Hudson's and I found this very good video. You may have already seen it but it gives a history of the store as well as lots of pictures from the beginnings of the store until the end. It even mentions the Maurice Salad!! I've never been to Detroit but we had stores in New England, Filene's and Jordan Marsh, that are no longer and are missed. Both got gobbled up by Macy's. ruclips.net/video/FnAwe_yE0Gs/видео.html
tallboyyyy Thanks, tallboyyyy! There have been a couple of videos and books done about Hudson's - it was quite a place! It was always fun to go to other cities and see their departments stores - all of them different! Thanks for watching!
I remember the lettuce being julienned as well. When I get around to recreating this fabulous salad, I'm going to julienne the lettuce as that's what I had at Hudson's.
Love the recipe! Didn't like the comment the person made about the camera moving! Ralph does a great job. Plus love the jokes and comments between you and Ralph. You make it feel like we know you. Keep on keeping on!!! 🤗❤

Hudson's Maurice salad was NOT torn. It was sliced very finely.
Wow! This was fun! I had that CKLW album and what memories...the music, the food from Hudsons...thanks for keeping Motown alive in our hearts, minds and tummies :)
J.L. Hudson's and CKLW (the Big 8!) are two of the best memories of growing up! So glad we could share them!! Thanks, Marie!
JL Hudson's always had a royal touch for everything they did -- thanks for the memories!
Hi Margaret! You are so right - Hudson's was really a special place and I'm glad it brought back some good memories! Thanks!

Back in the 1930's to 1940's lettuce was cut with scissors during prep. Love this recipe!
+Longhairbear Thanks for watching! Interesting about using scissors to cut the lettuce...I can see how that might work well!
I've heard about this salad for years, can't wait to try it! Thanks so much!

Love this recipe! Putting it on my "must try" list.
Thanks for posting this Kevin, I came across this salad a few years ago and it is one of my favorite luncheon items.

That dressing sounds really good, and your salad was beautiful!! Thank you for sharing some Detroit food history..

Love iceberg. I think tearing lettuce was done because cutting would create a "rust" discolouring where it was cut. Dressing looks great.
❤ this! THANK YOU!
You're welcome!
Love the bowl you made the dressing in 😁 It's my "china" pattern & try to collect the pyrex pieces, when I can find & afford them.
That looks delicious.I will deifinitley being trying that recipe thanks
Debbie Quesnelle You're welcome, Debbie! Hope you try it!

Hudson cars too ? Was there a connection between Hudson Department store and the famous Hudson car?
Hudson was an early investor in the car company, but didn't have a lot to do with it beyond that. Thanks!
I use to be able to pick up CKLW in Lakewood Ohio back in the 70's it's a shame how Detroit MI suffered so much.
Hi Ramona - CKLW was a real powerhouse station! Thanks!
been craving this salad since the restaurant was pulled from our local mall
Hi MI urbex - this is a very close replica of the salad I remember getting years ago in the Hudson's dining room. Thanks!
Have you ever made a Cobb salad? If you haven't I'd love to see you make one.
made this salad many times ... can't cut corners on the meat .. i use turkey and ham leftovers from thanksgiving ..
Great idea!! Thanks!
I don't remember chunks of egg in that dressing. I loved their Maurice salad and probably wouldn't have if it had chunks of egg that big. I always ordered it without gherkins too.
Hi sufrommich! There was egg in the dressing, but probably finely chopped. Thanks!

@@cavalcadeoffood Good to know. I guess at this point Hudson's is history. I still have some shopping bags and kept the credit card.
@@scooterdover2771 Great souvenirs of Hudson's!
looks great, MINUS the tomatoes and green pepper, definitely don't remember that!
still looks good though
Thanks, Grego!

Nice but Maurice salad did NOT have tomatoes or those green peppers.
That was mentioned in the video.
No green pepper or tomatoes in Maurice…but all else is spot on.👍
Ok, thanks, Denise!
Hudson's, the Marshall Field's of Detroit.
Two of the greatest department stores off all time! Thanks!
Who's that singin' "Good Morning Starshine" at around 18:00?
James - I listened but couldn't quite make out the singer's voice. It was so long ago - I'll have to ask Ralph!
I know this comment is very old but the singer was Oliver.
