    Fond memories. Your mother’s memory is probably of the area by the “For Children’s Only Shop” near by Santa. My mother was Christmas Carol in the 1954 parade. My Grandmother was head of Display for many years there - up until the early 1960’s. I have many memories of the downtown store (I’m 62). I grew up there…. When they had gloved and uniformed operators running the elevators.
    The classic salad was chopped iceberg lettuce with strips of julienne ham, turkey, Swiss and shredded sweet pickle on top, in rows.
    The egg was sieved not chopped, in the dressing.
    Onion juice is made by grating the onion. You can use the solids, if a paste.
    There was some parsley in it.
    The dressing was served on the side, with 2 pimento olives on side of plate.
    It was served with choice of roll or muffin.
    You could add a cup of the Cheese Soup, but it was considered a meal.
    They were also known for their Chicken pie’s (plus the cheese soup)
    I’ve had the original recipe since forever (all my life)- well before it was ever printed in a book.

      I would've loved to see it back in the day! Mom said you could spend the whole day there especially at Christmas. It sounds like your family has some very special memories of Hudson's. And I can't imagine the organization skills and creativity needed to be Head of Display of such a large department store. I'm sure your Grandmother loved it! Thank you for sharing the original recipe!! I do believe some things got lost over the years and it's nice to have the real thing to reference!

      @@ACookbookCollector if you’re in SE Michigan ~ the Detroit Historical Museum has a special homage to Christmas at Downtown JL Hudson’s going on until the end of year (maybe January) I’m going😉
      I still have a few of the large ornaments she hand made for the display trees. 💚🎄💚
      Just a point about the salad:
      Back up until the early 1960’s the salad was assembled to order- so sliced lettuce wouldn’t brown on the edges. Or it torn until lettuce knives.
      The arrangement was like a Cobb salad on top.
      You could order it tossed as well, but that was a request.

      Agreed- there was no egg in the salad itself until marshall fields bought out Hudsons. The sieved egg was part of the dressing. Seem to remember the parsley too.

    My mom listened to this radio show that featured her favorite food from Hudsons and acted like she just struck gold. she made it as described on the radio show (wrote the recipe .as fast as she could) . Mom ended up with 11 kids and we grew up with that salad at every special event. Hudsons was the best day trip we could be a part of.

      I'm so glad she was able to get that recipe! It's so good I can see why she made it for special occasions. And I'm sure it was fun to spend a day there. I wish I could've seen it in its heyday! It looked so interesting in the photos!

    Hudgins had restaurants in all stores. Lincoln Park was Hudsons budget store.

    I will definitely make this salad. Love the history behind it. Would loved to have shop at Hudson's.

    I found an old Hudson's menu online that said the salad was made with chicken instead of turkey

      Interesting! The Detroit News said to use either but I've only ever found recipes that used turkey. Maybe the salad changed according to what leftovers were needing to be used! 😅

    I was watching this today. You are wrong on several accounts. The restaurant’s were at many hudsons. At mine we went very often.(Waterford)

    My MIL & I used to have lunch at JL Hudson’s at least once a month. I would bring Maurice salad back to the girls where I worked once a month as well

    Add tarrrogan to the dressing and wedges of egg, green olives to the finish presentation

      Nope. That has nothing to do with the Original Maurice Salad.
      No tarragon. No egg wedges. Only 2 green olives 🫒 for presentation.
      In your own home ~ you can put anything you enjoy…. 👍🏻👍🏻

      NO, JL Hudson's was bought out by Marshall Field's and Macy's bought them out many years later. The Maurice salad was a Marshall Fields creation originally and had chopped egg on it. The Hudson's version never had egg until after MF bought them out. Also, all of the Michigan Hudson's had a restaurant and served the salad. I went there, probably once a week while growing up. We also attended the Tday parade every year when I was little, my father managed a restaurant called Greenfield's on Woodward avenue at Masonic and we used to sit in the upstairs windows to watch the parade in the warm room. This would have been from the 1950's into the 1960's

      @@micheleheeder Actually Dayton-Hudson bought Marshall Field's-which also created TARGET- they re-branded all of the Dayton's stores in the Minneapolis area and all the Hudson's stores in the Detroit area to Marshall Field's. Then they sold them to May Dept Stores and then May merged with Federated (which owned Macy's) a year later. And then Federated turned them into Macy's

    That is for sure a meal in it self....i think Hudson's was about 12 stories high in Detroit....Hugh store. Parades where great... That woman on the right could not stop eating, must be really good....

      I wish I could've seen the parades! They looked awesome! And we did end up eating quite a bit. I had 3 bowls of it myself that day!! :)

    Hudson's was definitely a bit more costly to shop there. Christmas and Thanksgiving were
    wonderful seasons at Hudson's. The Christmas decorations are something we will never
    forget. Detroit was a Jazz City, with many jazz musicians performing at Baker's Keyboard
    Lounge. I knew you would love the Maurice Salad!!

      It looked beautiful in the pictures. I'm sure it was a lot of work to decorate but so worth the effort!! I looked up the Baker's Lounge and watched some of the performances. Wow!! The menu looked awesome too! As for the salad, I had 3 bowls of it that day and has since made it again. :) It's so good!!
