    Two things that caught my attention, “you run and get some butter”, one of my childhood memories is of me and my sister sitting on the front steps of our house eating freshly made tortillas with butter and allspice. Also I noticed that you turned your tortillas with your fingers.I watched some videos and you were the only one who did so . Everybody else used a spatula and one guy used tongs.I still turn my store bought tortillas with my fingers the way my mother used to.

    As a boy I recall mom giving me the job of making the masa, it was easy but the final tortilla making was left to mom or my grand mother. They made them as close to being round as one could get. Mine looked like some outline of a state, you pick the state, we laughed and that is my memory of making torts as a boy.. We stopped using Manteca as we learned it was the best in taste but worst for our hearts.. True story, so many Hispano eat to much rich foods. But it tastes FANTASTICO!!!!

    Coconut oil when cold and soft makes light tasty tortillas. Better than plan shortening. Keep the coconut Manteca in the fridge if you live in an ardriente climate.

    Here in the Southeastern US, and for those who know, we are serious about making light, flakey biscuits. Personally...and I am an outlier on this point...I recommend using lard for the best biscuits. Lard is lauded (funny word trick there) as the best for making super-flakey French pastries. And, it is even more appropriate for Southern biscuit making...in my not so humble opinion.
    So here's my tip: to make the best layered, flakiest biscuits, I recommend freezing your fat (hopefully it's lard after this discussion) and grating it (using a cheese grater) into the (just then made) self-rising flour.
    For Southern biscuits, there's nothing like naturally cultured, full-fat buttermilk, but for tortillas, I think it's water that's supreme. And such super-homemade type of tortillas with lard will blow your mind...as.would my biscuits.
    I rambled on about the merits of various quick breads and I forgot the original point.
    Oh well...that's another day

    Thanks for the recipe. Made em today - 1st time ever. They came out OK. They were sorta cracker-ish as opposed to supple.
    i’m thinking i either rolled em too thin or needed more lard.I’ll probably double or triple the salt. You sure that was only a teaspoon?

  • @lourds3861
    @lourds3861 5 лет назад +2

    Adding a teaspoon of baking powder makes the flour tortillas a little bit thicker. I like them with or without the baking powder. If you’re not going to add the baking powder then add less lard otherwise the tortillas will come out looking glossy and shiny.I also don’t like using the instant flour for tortillas, they come out too thick and dry.

    Patti I don't know if u will be able to reply but I have a million dlr question for you. Why are u nit adding baking powder to your tortillas.? Does all the manteca, you used make up for the lack of baking powder? I'm just very curious. I hsbe eaten flour tortillas all of my life even way more than corn tortillas which I think is a traditional Mexican tortillas from Mexico. I love corn tortillas an I make them as,well but we were 10 in my family including mom an dad 12 total were brought up eating flour tortillas. My concern is that the lack of baking powder is that this way that u are making them will get hard. I promise Patti I am not judging this as the wrong way but I'm just so very very curious about this type of recipe. P.s. to me that was alot alot of manteca as well but to each their own. Thank u for sharing anyway Patti. I enjoy your show very very much but yes am questioning this way of making then without baking powder that's all.

    It would help to tell people the actual hand kneading process takes at least 20 minutes to get the dough the correct, soft consistency needed. Also should warn that adding too much extra flour destroys the texture of the tortilla! If you want crispy, dry tortillas add extra flour while rolling. You should almost not require any flour at all during rolling if you made the dough correctly.

  • @TinaGolik

    I have tried this recipe over, and over, and its dry, and crumbly every single time. It would be so much easier if the recipe was added in the description box, and instructions...ugh. its hard pausing the video to check ing...is it missing something? I give up...Ill find another recipe and try it. (All other recipes Ive found have 3 cups of flour, not 4...maybe this is why it was so dry...I still love Pattis show "Pattis Mexican Table", but whoever is running this channel needs to add the recipe in the description box)

    Have been making them similar to this but using baking powder as well , super thin they bubble up beautifully and are great like this with butter straight of the cast iron but they harden and lose a lot of their flexibility by the next day ? Am I cooking them to long maybe ? Or is that just the baking powder ?

    • @patijinich

      It takes time.... I had the same problem. I must've tried about 5 or 6 times but i finally got it down. I noticed the longer and slower (gentler, i guess) I kneaded my dough and the warmer my kitchen was the better they came out. Reminded me of my grandmother's kitchen...yum
