- Barbacoa is an ancient Mexican dish that is traditionally cooked in an underground pit. Pati demonstrates how to recreate it in your home kitchen, no underground pit required. You can use it to make sliders, or tuck it into tacos, or serve over rice. Recipe is here: patijinich.com...
The mixture of bringing an ancient technique to the present, also explaining the origins and how its done in respect for the culture is wonderful

Hi Patty I hope you don't mind that I call you Patty, I absolutely love love love You your cooking style. I've spent the last 3 years of my life learning how to cook Mexican food. I adore your culture the people the food in the sense of family I've received from the Mexican community. I personally want to thank you for making my journey a little easier I even made minuto your recipe of course although I'm not a fan it didn't taste bad. I'm 64 years old and love cooking just recently retired and seriously thinking about moving to Mexico that's how much I adore the people and the food every time your TV program comes on I take notes on where I might go in Mexico whether it's Mexico City or Guadalajara. Again thank you for making my journey a little easier your friend Chris

Hola Lorenzo! Yo soy Mexicana, naci en la Ciudad de Mexico ;)
Fantastio, deliciosas cómoda rica. Gracias por sues recetas yo naci aquí soy México Américana. Y me gusta cosinar aprender 😉
yes that type of cooking did exist but the banana leaves came after the spaniards arrival in fact they brought bananas in about 1550 to mexico...and goats and lambs weren't likely the original meat to be used because it made more sense for the spaniards to bring cows because they put out more meat and could also get milk from them..BUT PATTI i still love you...
Awesome informational educational video experience Y'alls
This looks like a good way to do it. Sorry to be again adding my sour input from Tamaulipas, but when they do barbacoa in street tacos it's cooked without any seasoning, I don't even think they use salt. So when they serve it to you, you add the onion, cilantro, salt and salsa. And spit out the pellejo. Now, we did have friends who after the plain barbacoa was cooked, recooked it in a delicious salsa. Here in the US I use the slow cooker for the meat, with salt and garlic, then recooked in a skillet in a tomato garlic chili salsa. It's absolutely delicious.
Awesome personality with gusto!
Love your T.V. show! Your food looks great!

We use leaves of the agaves and goat, like real ogs.
Very good
Pati those are beautiful pots but a bit pricey. Is there anything else we can use. Maybe cast iron?
Mmmmmm mmmmm that like so good Pati. And not ha d to make!!!! Tysm
Hey Pati! I've got a nice piece of bone-in beef ribeye. Should I cut it into smaller portions, or leave it whole?
I would leave it while and grill it :)
It was about two ribs worth, what I ended up doing was putting slits from the rib side and loin side. And dumped the puree in the cuts. When I wrapped in banana leaf, the leaf split in every way possible. So I tried to tie it like a roast. And put the rest of the package of banana leaf on top, in the pan.
But it turned out bitter! And tasted like a leaf. Lol! But I saved the flavor. With just a whisper of onion powder, masa, paprika, garlic powder. It tastes all right, the fat from the rib eye was wonderful in the meat, but from mixing it, it turned out like a patè! Lol. Another valuable priceless lesson!
Hi Patti your cooking is amazing 😄 where are the boys JuJu😄😄😄😄😄😄
Miss Pati I couldn't sleep so I'm sitting here eating hot tortilla chips watching you cook beef barbacoa. Man you are so sexy when you are cooking girl. I love grilled beef so much. Let's eat baby. Time for another one of your videos. Adios senora !!!

Please, I've noticed that in some of the recipes with dried chilies I don't see you take out the seeds...shouldn't they be removed, gracias
Elizabeth Theuser no
gracias
Yes, we always take out the seed from the dried chiles.
Is there anything with out tomatoes
Mary Grech
Enchiladas suizas also known as green enchiladas. Very very tasty.
Barbacoa is one thing only, Beef cheek slow cooked. Not any other cut of beef, not any other animal. It is also not coated in all kinds of red sauce. This is seems did not extend to where Pati and Rick learned about barbacoa.
Wasn't she in a lot of novelas back in the 90's and early 2000?
Ha! That was not me...
Pati, did you say BRISKET? With a cook time of 3 hours? !
Yep, brisket for 3 hours. You can use round roast as well ;)
@@patijinich Thank you so much for the reply! We are following this recipe tonight, I'll let you know how it goes. I am a registered BBQ Judge and when you said three hours I was excited! My family says hello, we love watching you cook!
That is not barbacoa. those are mixiotes de res!.

We eat Barbacoa and Big Red in San Antonio, Texas but only on Sundays! Y solamente con tortillas maize! No tortillas harina! Never, ever! Ever!
South Texas we use Beef Cheeks and Beef Tongue
i find them in mexican super markets and also in asian super markets
Interesting for Mexicans it means a dish, but for los caribeños it’s grilled meat or bbq
👏👏👏. 🌹🌹🌹
Kinda reminds of puerco pibil
Oh my godness...
When it comes to cooking, what is it with clove????? That is so over powering flavor.
