    One of my favorite keto snacks is Roasted and salted Pecans, I absolutely love, love, love them in fact if I'm not careful I can eat a whole can -- and I have before. However, one of the problem with most store bought roasted pecans is the type of oil they are cooked in, most are cooked in soybean or canola oil, which is bad for you Keto or no keto. We recently came across this simple butter roasted pecan recipe and thought we'd pass this along.
    The key with roasting these is to watch them and ensure they are getting too brown, because it seems like each batch of raw pecans is different. We've also experimented with adding salt, cinnamon and dusting with artificial sweetener...so far of the sweet versions I like the best is a combination of Stevia and Monk fruit, you can get this blend from starbucks, I think they are like 1 carb per packet, and I've only ever used this on a small amount of nuts.
    We also find that these nuts taste better if you microwave them for a few seconds after you bake them and they've gotten cold.

    Correction ALERT! Bake these at 300 degrees not at 350 per the video overlay. Again 300 degrees is the correct temperature!

      CJsKetoKitchen.com let’s say I roasted them and I wanted to store them later on. Is that okay? Or will the pecans get stale? Or spoil?

      @@don_dennistan5385 I freeze pecans, put them in a ziploc bag and suck the air out. They're good as new when they thaw.

    I coated them in a bowl and then spread them on a pan, it made coverage much better.

      Yes, coating them inside a bowl first... with melted butter and a little Himalayan sea salt or whatever spice, then spreading them on cookie sheet I believe, is the easiest method, too! 👍

    I always make mine with one egg white, lightly whisked. Cinnamon and swerve coating and bake 9 minutes. So good. I'll have to try it this way.

    I make these. ( WITHOUT that much SALT) But then in a saucepan I will melt some butter and unsweetened baker's chocolate and some sweetener and then pour that over the pecans and refrigerate and then break them up into pieces and I have chocolate pecan bark. So good!

    The first time I made this recipe, I followed your recipe exactly. And I loved them. This time I wanted something a little sweet. So I browned the 4 tablespoons of butter and added a tablespoon of sukrin gold and some liquid sucralose. I also added salt. I cooked the pecans for about 45 min at 305, stirring them every 10 to 15 minutes. They are delicious!

    I roast pecans,walnuts and pumpkin seeds together. Add butter,cinnamon and a little sweetener. No salt. Great keto snack with sugar free chocolate chips.

    Forget the oven. Do these in your air fryer. Just put pats of butter on the bottom of a pan that fits in your air fryer basket. Cover the pats of butter with pecans. Put some pats of butter on top - I end up using about half a stick total - and cook at 325º for about 15 minutes. Shake/stir about halfway thru. Check those last 5-7 minutes to make sure they aren't getting too brown. Salt and go. I eat these almost every day. I get the bags from Sam's Club.

      Lol Julie.... pecans are our holy grail nut. We definitely have to watch it, although we have found portion control is a bit easier when they’re roasted in butter. Maybe it’s just our imagination 🤔

    Hey Sarah 👋🏽 As I prepare to make another batch of your granola bars (peanut butter this time), I'm making my butter roasted pecans in my Ninja Foodi. I didn't feel like heating up my entire kitchen with the oven on this hot September day. It appears to have worked pretty well. I lowered the temp to 285° because things tend to bake a lot faster in the Foodi.

    I think in England the pecans don't normally come with anything on them. This is making my mouth water, I love pecans! never had them salted though! I would normally imagine them in a recipe with something sweet, but I'm sure they're delicious!

      Pecans here in the States come either raw, like we used in the recipe, or roasted, and it’s always in an “unfortunate” oil choice, that’s why we decided to start roasting our own. Salted nuts are sooooo delicious. We hope that you give it a try!😻

      Aw no that's sad! I think in england there's a few regulations on what ingredients can be used as if I any see any American candy in the stores they normally have ingredients in them that the products here wouldn't have. I have tried salted and roasted almonds before the blue diamond ones I think they're nice! so I think salted pecans would be super nice! also , roasted edamame beans that I cooked from fresh I just didn't add any seasoning but they're super yummy too, I love snacky things! xx

    Okay, I watched this about 2 hours ago. I liked what I watched, the pecans looked good as well. I had 2 pounds of pecans that were about to expire. So I measured out 1 pound for each batch. I melted the butter, placed the pecans in a 1 gallon zip bag, loaded them with butter, then I did the old shake and bake method, I do not shake as good as I once did, but I shake once.....whatever. Anyways, I put 1 pound of pecans on a pan like you used, got them all flat, placed in 300 degree oven and set the timer for 10 minutes while those were baking I prepared the other batch and had them ready to go in when the first pan was done. Then while the second pan was baking I flipped over the pecans on first pan, then repeat for other pan. Clear as mud? They are fantastic!!!! You are the best. Your latest fan.

    Next time try adding cumin, garlic and chili powder! And add a splash of Worcestershire sauce to the butter. Amazing!

I tried making vinegar and salt almonds last night and they came out so so they don't taste as good as the store bought ones but then again they use lots of chemicals I only used pink salt and vinegar.     I appreciate your video it's wonderful but a description would be nice from what I gathered 300° for 10 minutes then take them out salt them and stir them and then go for another 10 minutes and then they're done. Hopefully a description in the bottom would really help thank you so much for your video you're very kind for making it don't want to be critical of you because it's a great video

      We leave ours out at room temperature in a plastic container. We’ve never had them go bad. Too delicious ☺️

    The recipe you linked to says to use two tablespoons of butter for pound of pecans, but your video says 4 tablespoons of butter per pound of pecans. Which is correct? Thanks.

      I would use the 4 tablespoons. I am of the thought the more butter the better LOL

      I keep ours at room temperature. We go through them pretty quick, so I have never had them go bad. 😊

      I just store mine in a Ziploc container, I never have any problems with them turning funny tasting or rancid… But we go through them pretty quickly in our house🤣

    How does keto fare with weight watchers? Nuts are a no no on their plan as are a lot of things. Love some feed back. Thanks

      They are not the same, really in any way.....keto stresses healthy fats, adequate protein, and low carbs (20 grams). Tracking is not essential for weight loss.
