INGREDIENTS:
CHOCOLATE CREAM FILLING::
3 Teaspoons Gelatine
3 Tablespoons Cold Water
255g Dark Chocolate
600mL Thickened/Double Cream
Arnott's Choc Ripple Biscuits
Frozen Raspberries
GANACHE:
80mL Dark Chocolat
40mL Whipping Cream
To make Ganache: combine and microwave for 20 seconds, stir and repeat till smooth. Let mixture thicken before use.
RED SHINY MIRROR GLAZE:
50mL Water
70g Condensed Milk
100g Glucose Syrup
100g White Chocolate
100g Caster Sugar
3 Teaspoons Gelatine bloomed in 60mL cold water
Red Gel Colour
EXTRAS FOR GOLD TRIMMINGS:
100g Nestle's Dark Chocolate Bakers's Melts
Gold Edible Spray
Thick Bubble Tea Straw

1. Can I freeze the dome for few days? Glaze it in the morning, keep it in the fridge, then serve it when dinner. Is that possible?
2. Can I make the glaze 3 days in advance? Cover with plastic wrap, put it in the fridge, then only thaw it in the fridge when I'm about to use. Is that possible? Will the colour or the consistency change compare to make it fresh?

Yes to all the questions in point 1. For point 2, you can can make the glaze in advance and refrigerate. When you are ready to use it will be solid so you will need to microwave for 10 seconds at a time stirring each time till you get it back to working temp and consistency.

This is beautiful, but in all mirror glaze videos it's never said if it should defrost in fidge before serving or not, it is HARD rock when it is glazed.
Refrigerate for 1-2 hours after glazing to allow to thaw before serving.

Glaze has water in gelatin and added to glucose. Does the 50 ml water go in glucose and you make gelatin bloom as in cream filling?
Can these be sorted in frig if made day before. Or kept frozen for a day.? Lots to do day of dinner
What if l don't have a stick blender? Can l carefully whisk it with a whisk until it gets incorporated then maybe strain it so it doesn't get lumpy? Thanks for your help :)

I won't dissolve. It will be the same as what you see in the video. It will need to thaw once glazed and assembled.

For frozen need only thickned cream or any non dairy cream or 25% fat amul fresh cream will work.....pls reply ....I tried some recipes for frozen but didn't worked

No, if you let it thaw in the fridge for around 2 hours before serving you will get a creamy result like you see in the video when I cut into the bauble.
