You don't want to draw out moisture! Especially before putting in pan. I do it in the pan and other side when turned. Also pepper so it doesn't burn. But there is no wrong only preferences! So this way is not wrong or worse then yours! Try all methods then decide for yourself what you prefer and respect others preferences
