    Tofu Made With Nigari:
    Liquid Nigari 14g (2 Tsp)
    Warm Water 80g (⅓ Cup)
    Fully Cooked Soy Milk 1920g (8 Cups)
    Tofu Made With Gypsum:
    Gypsum 6g (1½ Tsp)
    Warm Water 80g (⅓ Cup)
    Fully Cooked Soy Milk 1920g (8 Cups)
    Tofu Made With GDL:
    GDL 5g (1 Tsp)
    Warm Water 30g (2 Tbsp)
    Fully Cooked Soy Milk 1920g (8 Cups)
    Friendly reminder:
    For the homemade soybean milk, the dried soybeans to water ratio are 1:8 by volume.

    Which one is better at making tofu? gypsum or nigari? I have been told that gypsum is better because it brings out the sweetness of the soybeans whereas nigari is very bitter.

    It is not clear in the video for gdl, do you put the silken tofu in the press and for how long? How much cooked soy milk to use and how much gdl for a medium firm tofu? Thank you

      I use calcium sulphate. 1.3kg bean, soak in water 3hours. Spin using machine 7times...each spin use 2litre water. Cook soymilk to boil. Mix 30g calcium sulphate with a cup of water. Pour the calcium sulphate into a thermos and immediately pour the hot soymilk into the thermos. It's good to pull while pouring the hot soymilk as high as you can. Close the thermos using styrofoam. Put something hard like plywood or tile onto the styrofoam and put a bucket full of water to compress the styrofoam...so that you get an airtight thermos. You will amaze how beautiful your taufufa/silk tofu.If you don't want to use my technic just use GDL. You can easily get beautiful taufufa but GDL cost money a lot.

      This is my video making tofu...with 1.5kg bean and 30g cs. I estimate around 15liters soymilk. I got 50pcs tofu that size...2.75inx2.75in.
      The less U use cs the more jelly like ur taufufa. Too much cs will destroy the soymilk. Too jelly will make the press work so hard and sometimes the tofu will stick to the cloth.
      Try and error as I did haha 😂

      GDL is the lactone of gluconic acid

      It's used to acidify the mixture

      Press it for 30 mins. Using the nigari or gypsum. It must be 12 hours pressed if using gdl

      ​@@lilyleung2237it needs 2 phase with gdl to become a firm tofu. In the first phase (making soft tofu) how long should I leave the tofu in pot to have that jelly texture tofu? I just mixed my gdl powder with tofu and it is still in the pot. Dunno how long should I let it be there?
