    This is fun to see! I'm planning out a blueberry maple wine experiment soon with hopes of getting a yearly cycle of it going (buying the old grade C syrup locally if I can). This series has definitely helped inform me of a few corners that would otherwise be hard to sort through, so thanks!

      I’ve also got a blueberry maple wine project in the works! We’ll have to compare notes.

      @@DointheMost oh yes please haha!! If I can snag any of the old grade C stuff next spring is be willing to try shipping some your way. It’s basically the super dark tails of the boil that was used as an additive rather than sold direct like grades a or b

    What a cool vid! I'm going to try a maple wine and have my friend still it. Been doing the aged eggnog and this sounds amazing!!!

      I have been so pleased with my maple ferments. It really brews up clean and rich!

    how about at makgeolli jack? im think about it that now using my makgeolli 75cl bottle. decision is maybe will 1st time only

    I'd love to hear more about terpene-friendly yeasts. A quick search reveals terpene production using yeast but nothing regarding brewing (that I saw).

    So now the $10,000 question is is the ABV of the jack high enough to make this long-term refrigerator safe? As it is when using the bourbon and brandy?

      Well 20% abv even at 25% apple jack to 75% egg nog would dilute under 20% abv. So whatever safe is that will answer the question.

    A cinnamon stick but the Vietnamese variety which is a softer flavor than the other kind might be good.

    Definitely looks to be a interesting brew!
    Started a new experimental Mead last night (cran-grape juice "melomel") and was on my way to the brew shop earlier (my yeast was dead dead xD bad to buy more) and caught myself humming the theme song 😂

    After making the maple jack . I wonder if there isn't a way to repurpose the low wines into something else.

      Thinking a meat brine. Or soaking wood for a smoker. Meat prep, really is all I’ve got hah.

      Yes! All went well, baby is doing great. Anna is doing great. Baby’s aunt took care of her in the living room while we filmed this one. :)

    i can get good, traditionnal maple syrup from a familly that been doing it for maybe a bit more than a 100 years for about 40 CAD $ a gallon. you peeps are being defrauded. always avoid buying stuff from the maple syrup federation, its pure market manipulation...
