I was born in Almaty Kazakhstan which is very close to Far West China region but never had a chance to visit China. But I have tried Laghman many times before simply because this is fairly common dish in Almaty. Thank you so much for sharing this video and bringing back precious memories.

Austin, very innovative video. I love watching people eat the various quisines in China. I hardly ever want to try the street food I see some people obsess over. Guess I am afraid of getting sick from gutter oil. But restaurant food always looks so tasty.

I understand the fear, but honestly, gutter oil is only really a problem in Guangdong and the immediate surrounding areas - I don't think I've ever seen a news story about gutter oil that wasn't about Guangdong, and I'd wager that the majority of China's food scandals (that make the news, anyway) come from Guangdong, Shanghai, and sometimes Beijing. I've seen scandals in other places, but they are very, very few compared to those areas. Food safety is a general concern in China, but it's definitely improving every year, and when it comes to the really heinous stuff, a lot of the stories seem to center in Guangdong, so if you're outside of there, you should be fine! :)

Honestly, I know nothing about Far West China.... I think it would be interesting to see and do. We have restaurants in Toronto that serve these dishes too in the east end. Pretty crazy when I think about it.

"Weegur" IS the proper pronunciation. That's why everyone says it like that. It's a quirk of making an English spelling of a non-English speaking people. The Uy -> Wee
I am an Uyghur, me and many of the uyghurs I know actually don't like to be called weegur...we call ourselves "Uuu-y-gh-u-r" U like in Uganda for example . Uyghur means united comes from a unification of many tribes back in the history. It is like United States of America gets the shortened name united after thousand years. The misproounciation I believe comes from the Chinese translation.

What's your reasoning behind the 10 minutes? Do you feel like there were parts of the video you wanted to be longer? It's interesting that you say that these dishes would be "familiar to a typical Westerner". In my experience (and opinion), these dishes are completely unknown and unfamiliar to most westerners! It suits their palette, sure, but it's not familiar.
There are some Uyghur restaurants that may offer laghman and some derivatives of the dish from other cultures, but it's not something I've found easily outside of China.

That's actually a much harder question to answer than it seems. The problem is that in the English language, "Chinese" can mean both a country resident or an ethnic group. That's not the case in the Chinese language. There is a specific 中国人 (for the country citizen) or a 汉族人 (for the Chinese ethnic group). So if you're asking do Uyghur consider themselves Chinese, the answer is both "yes" and "no". Are they citizens of China? Yes. Are they ethnically Han Chinese? No. They are Uyghur, and very proud of that fact. As for the historicity of the region, there is much debate that's not worth going into here. Too much political baggage.

Polo looks exactly like Plov here in Kazakhstan. The Kazakhs also like lagman.

Sometimes the polo (rice pilaf) can be a bit oily - so I can't eat it every day - but overall it's very well cooked and absolutely delicious!

That's actually a much harder question to answer than it seems. The problem is that in the English language, "Chinese" can mean both a country resident or an ethnic group. That's not the case in the Chinese language. There is a specific 中国人 (for the country citizen) or a 汉族人 (for the Chinese ethnic group).
So if you're asking do Uyghur consider themselves Chinese, the answer is both "yes" and "no". Are they citizens of China? Yes. Are they ethnically Han Chinese? No. They are Uyghur, and very proud of that fact.
As for the historicity of the region, there is much debate that's not worth going into here. Too much political baggage.

Okinawan people are ethically Ryukyuan people, they are native to the Ryukyu Islands. They became part of Japan after being annexed in 1879. They were annexed without their consent. Just like Hokkaido. Unlike China, Japan does not officially recognize any minorities, despite having many.
