Ok I never did it with butter under the skin. Will have to try that. Nice video.
Thank you. Butter does seem to help keep it moist. I have always prepared a turkey this way but had never done a chicken like this but I am definitely impressed. The chicken was falling off the bone though.

You are welcome! I must say the chicken salad sandwiches were so good that the only other thing made with the chicken was enchiladas.
Girl if you don't eat the skin don't cook under a broiler for 10 min, lol! Not being ugly but I don't eat the skin and I've been cooking 30 yrs in pressure cookers and your chicken was perfect when you took it out of the pc.
Lol - I like to crisp the skin to cook more of the fat out. The chicken meat was delicious!
