How to make Uyghur Bread ("nan" or 馕) in Xinjiang, China

    For years I have walked by countless Uyghur bread stands, bought the Uyghur flatbread, and continued on my merry way. I’ve always been a bit curious about how to make Uyghur bread but never had the time to really watch the process.
    But all that changed this week when a friend invited me to spend the afternoon with him learning how to make Uyghur bread in his little bakery in Turpan.

    To Uyghurs, the bread is not a lone snack; it is eaten with a meal or at least with mutton. They also eat it with watermelon as breakfast - East Asians and Central Asians must have wheat or rice product as "main food" with any meal.

    Most delicious .. I had this in Nanjing and Guangzhou with a spicy sauce brushed on , after out of the baking tub.. can't forget this delicious taste

    We have same bread type in Turkey. It is generally made in villages. My grandmother was doing it. We call it " tandır ekmeği" You can google it and see the how similar :)

      That's great! I know that this type of bread is common around Central Asia, but the Uyghur flatbread certainly has unique aspects to it :)

      Travel Xinjiang: Far West China In Turkey it is made in same owen and in same way that uyghur do. Main differences of uyghur bread than our tandır bread Are figures on bread. We dont do any figure. Uyghur and Turks Are people of similar culture actually :)

    Great job, Josh! I had the same experience when we lived in Kashgar. I arrived at the nan shop at 4am, took videos and pictures of the whole process until almost lunch. Your video here was almost identical to my experience in Kashgar. Now if I could only find a tonur here in Wisconsin... :-)

    At 12:18, the tool for applying the piecings is made with chicken feather quills. You can see the results at the very first frame of this video.

    I love that stuff too. I ate it EVERY DAY for 2 years, that's how good it is. I also used it to make pizzas, works great for that too. I made my own tomato sauce and found good prices on Italian spices for the sauce and good Mozzarella cheese at "The big Freezer". Len Koo, not sure how to do Pinyin on that name for the big wholesale market building, which supports mostly restaurants in bulk foods. the cheese blocks were 5 Kgs each, just freeze the excess.

      +Travel Xinjiang: Far West China, I had a western style oven in my house too, which is very rare in China. You can also use a toaster oven, if one can be found to buy.

    The speed at which they work at is incredible. I can only just manage to put a pizza in the oven without dropping it. I'd love to get to eat Uyghur nan. The patterns are very pretty. How would Uyghur nan compare to Indian/Pakistani naan bread flavour and ingredient wise? I'd assume that it would be similar but different, although the cooking process more or less identical (charcoal/coal fired masonry pot oven). Sadly there are no Uyghur restauraunts in the UK which is a great pity :( so it'll be some time until I find out. Central Asia as a whole is on my "bucket list" of places to see, smell, feel, hear, explore and remember.

      I honestly don't know how they compare, although I've heard it's quite similar. Everything is so identical, I would assume that the differences are trivial at best.

    Yes, I think you are telling the truth about Nang. I've had them in the late 70's in Xin Jiang. They are so delicious and fragrant. I don't believe they put eggs and milk in their dough like all these other clips are telling people now a days. As a matter of fact, I don't think they even put sesame seeds back then, and the Nang were already perfect in every way.

    I tried this delicious bread when I was living in China, and now I would like to prepare it in my country, despite not having that oven. Can someone give me the recipe for this bread? how many grams of flour? How much salt? How much sugar? How much water? The dough contains brewer's yeast? thanks!

      It's quite similar to pizza dough base. So u could that ready made dough from the grocery store. Make into smaller doughballs. Heat up your oven on broil at 450 . Meanwhile flatten and roll out dough to pita bread size. Further poke into dough with clean fingertips. Brush bread with milk or egg wash. Sprinkle sesame seeds as desired. And insert nan bread in hot oven. In middle section. When bread turns golden turn side for a bit. Check for doneness. Remove spread some butter n enjoy.

    There is no official local time. All of China has one time zone. They simply go to school at 10 a.m., eat lunch at 2-3 p.m., and dinner at 9 p.m. Generally, Han residents keep their watches set on the official time, but some Uyghurs set their watches 3 hours earlier to have 12:00 noon coincide with sun overhead.

    At 01:19, the tool for making the circle of pricks (Yes, that's another meaning - look it up) has a dozen or more chicken feather quills.

      Some of the older ones perhaps used chicken feather quills, but nowadays they are metal nails.

    Most Han refer to this as "Xinjiang bread" or "Xinjiang náng". They call a Uyghur restaurant a "Xinjiang restaurant". They call Uyghur cultural dance "Xinjiang dance". They are not keen on referring to THEIR province's culture (dismissing the many conquests of Xinjiang by various nations) as Uyghur.

    I thought the whole of China was one time zone. I don't understand the reference to Beijing being 2 hours ahead.

      It is all one time zone, but people in Xinjiang tend to operate on "local time" that is two hours behind. It's not official, but it's very common out here.

    WE UIGHURS DO NOT HAVE A WORD "NANG"-I THE UIGHUR WORD IS NAN !CHINESE DO NOT HAVE ANY BREAD AND ETHNIC CHINESE MUSLIMS HUI JUST COPYIING UIGHUR BREAD,AS THEY DO NOT HAVE OWN WAY TO MAKE IT!
