    Ingredients :
    1 medium size onion chopped
    500 gm mixed mushrooms
    Porcini mushroom's
    Portobello mushroom's
    Champignon mushroom's
    Shimeji mushroom's
    400 gm pasta
    2 tbsp oil
    2 tbsp butter
    1 tbsp chopped garlic
    1 tsp dry oregano
    1 tsp chili flakes
    1 tsp black pepper crushed
    1 tbsp thyme
    salt to taste
    1 cup fresh cream
    Parmesan Cheese
    1 tsp truffle paste
    Water for boiling pasta
    (add salt and oil in water)
    Garnish :
    almond flakes
    Parmesan cheese
    Method :
    Chop a medium size onion and cut all the mushrooms as required sized.
    In a pan add water add salt and oil, when the water is boiling add your pasta. Use any pasta you like.
    Cook the pasta for 5 minutes, once the pasta is cooked strain it out and run under cold water. Cool the pasta. Remember we want our pasta Al dente, means not fully cooked. We are gonna cook the pasta in the sauce.
    On medium flame, put some oil and butter in a pan. Make sure your butter doesn't burn.
    When your oil is hot and your butter is melted add chopped onions. Sauté the onions and cook them for 5 minutes.
    When the onions are soft add roughly chopped garlic cloves. sauté the garlic and cook for 5 minutes.
    Now add the mix mushrooms in the pan and sauté them. Cook the mushrooms till they are slightly soft. This will take 2 to 3 minutes.
    Now add dry oregano, chili flakes, black pepper crushed and thyme. Mix well and sauté the herbs on low flame so that the herbs doesn't burn.
    Add salt to your taste and cook the mushrooms for more 3 minutes.
    Now make your flame to medium and add fresh cream. Mix well with mushrooms and keep it stirring.
    Now add the cooked pasta in the sauce and mix the pasta well in the sauce and mushrooms. Cook the pasta for 5 minutes.
    Add parmesan cheese to the pasta and mix well. At this point lower your flame as the cheese will stick at the bottom.
    Add truffle paste, don't add a lot as truffle is very strong in flavor and can easily over power your pasta. You can avoid putting truffle if you don't have.
    Mix well the truffle with the pasta. Now close your flame as the truffle is to be added at the end, when your pasta is cooked.
    Mushroom Pasta \ Pasta Ai Funghi is ready.
    Garnish the pasta with almond flakes and grate some parmesan cheese.
