- Hercules Candy goes slow motion with all the different candy making going on during the day. Craig decided to get some very satisfying slow motion shots to satiate your sweet tooth. Also the gas inside of it is nitrogen so they wouldn't spoil. They have to keep some chips to nitrogen ratio to be successful

Sohla from BA explains tempering really well actually. I'll paraphrase: There are several different crystalline structures that chocolate can form into. When we talk about tempering we are actually referring to one particular structure where the chocolate solidifies at room temperature and has a snap." When you seed temper chocolate you are adding the crystalline structure you want into unstructured chocolate. It's like giving it a hint to form those patterns. A little push in the right direction if you will.

Thank you Max for covering potato chips for the 1000th time. Maybe another 1000 times and we'll get tired of it but most likely not. I love watching the videos. Even if it's the same thing over and over again. Very relaxing and a much needed break from the busyness in our lives.
If I won a huge lottery, I would fly over to New York to buy a huge amount of your candies n chocs to just pig out on them. I live too far away to order l then would wrap them in lots of bubble wrap to bring them home. Lol.

I couldn’t work in a candy shop cause I’d just eat it all
My dad used to own a pizza shop in NY and when I was younger I would come downstairs (we lived above the actual shop in a apartment.) and I eat all the pepperoni. he would have to legit send me back up stairs and lock the door that was in the back room leading upstairs so I couldn't come down again. 😂 Then as I got older I would eat many bags of chips and pizza and wings for free it was great but we moved to Colorado and now we haven't been able to find such good pizza and wings ever again 😅🙃😥

My mom made peanut and pecan chocolate all the time. She would put a bit of paraffin wax in it. It tricked the tempering. Always came out shiney. Oh yummy.
