  • 蝴蝶结饼是我心心念念的其中一款年饼。那些年,并不是每户人家拥有烤箱,所以节日糕饼多是油炸类。每年新春,从母亲手中变出来的年饼,其中就有蝴蝶结饼。浓郁的蛋香,酥松的口感,真的会一口接一口吃不停呢。可惜当年年纪小,没有学上来。再后来家里有了烤箱,年饼慢慢从油炸类变为烘烤类,久而久之蝴蝶结饼就此绝迹,母亲的食谱也没有留下来,至此我心中的蝴蝶结饼仿若化蝶般飞走了,相忘于我的新年年饼节录里。这次为了拍摄视频,找了许多配方比对,终于梦回那些年的古早味。
    面团A食谱 Dough A Recipe :
    普通面粉 100g plain flour
    食油 10g cooking oil
    鸡蛋 不超过 50g whole egg
    细砂糖 25g fine sugar
    黑芝麻 3g black sesame
    面团B食谱 Dough B Recipe :
    普通面粉 100g plain flour
    食油 10g cooking oil
    鸡蛋 12g whole egg
    细砂糖 25g fine sugar
    清水 30-35g water
    黑芝麻 3g black sesame

    Hi, can I know what is the difference between dough A and dough B? Which one is better? Sorry, I am confusing😃

      Hi 😊Dough A full of eggs aroma. Dough B just add in a bit of eggs, but more crispy. I love this 2 recipe so I shared it to all of you. Hope you will like it. 😊

      @@sriasia3634 no, actually dough A not hard, but a bit different with the dough B. You can try this two recipes, then you will know the difference. 😊

      @@meizilooloo hi, I have tried out the crispy type. It turned out nice with bubbles bubbles. Can I use a stand mixer with the bread making hook to knead the dough? I feel my hands are not strong enough to do the kneading...😃

    I grew up in Hong Kong, and the only kind that I ever tasted and love is the salty ones. Living in USA for decades now but in my recent trip back to Asia I found a vendor in a Guangzhou wet market that sold them, and I bought a small amount. They tasted just like what I had and loved in my childhood. I wished I had bought more as I couldn't find the vendor again the following days. I believe the salty ones are made with fermented tofu curds, which is why it is packed with umami.
