INGREDIENTS:
Rajma (Red Kidney Beans): 1 Cup raw beans (2 cans if using canned)
Spices:
1 tsp cumin seeds
1/2 tsp turmeric
2 tsp coriander powder
1/2 tsp cumin powder
1 tsp Kashmiri chili powder
Pinch of Hing (Asafoetida). This is optional. This is supposed to help with digestion.
1/2 tsp garam masala.
Salt to taste
AROMATICS:
1 large onion
1 tbsp ginger garlic paste
2 green chilies for heat (grated or crushed). Adjust as per your preference.
1 cup crushed can tomato or 2 large tomatoes.
1 tbsp of ghee or butter (at the end to drizzle)
Fresh coriander
OPTIONAL:
1 tsp dried fenugreek leaves (use them if you have them at home)
1 tbsp of cream. This is completely your preference.
Instant Pickled Onions: Thin slices of onion, lemon juice, chili powder.

do you use the juice from the cans to put in the curry they do have chilli sauce as well with the beans or salt water ones? thanks
Personally I would cook canned beans with the canned juice, they're usually unsalted and there's loads of flavour and vitamins in there. I guess you could use the ones with chilli sauce as their main flavouring is chilli and cumin which are both a major part of this dish, but with that extra flavouring it may end up a shade over-spiced. Maybe use half the chilli sauce and top it up with fresh water. Just my own thoughts on this. At the end of the day, I guess there are no hard and fast rules, just personal preference.
