I’m going to try the orange zest and browned butter next time I bake these. I loved your suggestion of chilling the pan, and also oiling the cooking rack. Me too, I even ordered a special pan for them...but just can't get in the mood to make them....I'm thinking there must be an easier recipe for people like me.....I don't have the patience for all this.....lol
I love madeleines and the recipe I use is almost identical to yours. I do them by hand, placing the metal bowl over gently boiling water. I love the orange flavored ones, and also the almond flavored ones. If you prepare the batter in the evening, you can keep it in the fridge for up to three days in a sac à poche and cook few madeleines every morning!

Never did but after seeing you demonstrate how to make them I think they would be perfect for the high tea I want to cook for my friends. I could mix the batter the day before and just pop them in the oven before everyone arrives. I am busy getting ideas of things to prepare before hand so it's not such a rush on the day. Thanks.

Going to have to make these soon. I've got a madeleine mould which I've only used once a long time ago. They were a bit rubbery but the genoise mix which I've used for cakes is always lovely. And we love orange flavoured desserts! I'd serve them in the summer with maybe ice cream, or panna cotta or say creme brulee. Delicious.

Just made these and added a quarter cup chopped candied citrus peel. They taste really good! the sweetness is ok but I would cut the brown sugar entirely in the future. Thank you for the recipe!

My mother was an expert cook, she was a kitchen maid at the age of 14 and God Bless her, she worked her way up and learning her craft in the big kitchens of the Gentry!! She cd cook anything and always laid a beautiful table. She cd certainly make do with little ingredients during the war years and rationing. .... as for Madelines, she used to brush then with homemade hot jam and cover them with coconut. She used to dip them in melted chocolate, a wee dip of dairy ad a wee dip on the other side of white. I remember they wer just gorgeous . And..... she tried not to wash her madeline tin, just wipe it clean and dry it. Happy memories. Today I baked 6 dozen buns and decorated them for a charity bake sale:). Happy day for this ol lady.
4/4/20 oh my I did not know you made these.....happened to see them on your FB page....and I have the pan, 12 to a pan. I purchased it online back in the winter to make these and could not find a recipe until now.....so now I have these to make....you have so many great recipes, I will never get caught up.....plus I have others from other blogs.....I just saw another cookies you made too and I love these and have never made them, and can not find them in a bakery or these Madelines either..... wish I could, I'd just buy them, as these are too much trouble to make....lol but oh so good.....

Do you know why most other Madeleine recipes don’t beat the eggs as much as yours? What difference will it make? Wouldn’t most of the air bubbles be deflated by the time you take it out of fridge after hours or even days?

Did you chill the batter first? And I find it best to place the batter in the center of the mold.
