Any tips on making this in a bundt cake pan? I still haven't used mine since I bought it, and I feel this beautifully moist and spongy cake recipe may be a great first attempt, but I'm not sure if I need to adjust the recipe at all? Not a baking expert! It's been three days since I tried this recipe in a square cake tin and I'm already planning the next ones!! So rich and spongy and delicious!
This recipe should fit nicely into a standard bundt pan! I would recommend greasing and dusting your Bundt (cocoa powder is the best option here) before filling with the batter, as you won’t be able to line with parchment. That will also help the Bundt rise. It may bake quicker due to the heat also coming through the centre, so I’d check it about 10 minutes before the suggested time with a toothpick, or cake skewer, for doneness. Let me know how you get on! 😻😻

The recipe was the perfect amount to fill them about 3/4 full, and the cake rose a bit beyond the forms after baking as well. The cakes were super moist, spongy, and perfect consistency, and stayed just as soft/fresh for a week (the time it took for them all to be eaten). I didn't grease the pans at all as they were silicone. Overall it worked perfectly, although I realized there is not nearly as much surface area for frosting, as the cake is taller than wider this way. I only used half the frosting recipe and it was hard to frost them as it wasn't runny enough to drip down the bundts. So the "cons" of bundts were far less frosting, but the "pros" were that my friends who don't have as strong of a sweet tooth as me actually really enjoyed the cake as it was, without so much of the heavily sweet frosting. Unfortunately I don't remember my baking time! And now I've doubled the recipe to make a large traybake for holiday sharing. I appreciate how much of a low-stress recipe it is. And someone has already asked for the recipe!
OK this looks perfect? Whenever I make a cake without eggs using vinegar and baking soda it's too crumbly and it just falls to pieces when I try to cool/ice it. What am I doing wrong?

It sounds as though you may not have used enough liquid in your cake, because while eggs help the cake to rise, they also add a lot of moisture! Try this recipe out and see what you think! If you like it, I have a few other vegan cake recipes in a variety of flavours! This cake can also be made into a layer cake, in a round tin, or as cupcakes! Just be sure to get them in the oven really quick!! Hope that helps!! 😻😻
I think that cake would cure anyone's state of depression. Dr. Feelgood recommended... Question: Was Vegetable Oil" available back in that era of the depression? I'd thought that some other form of oil like solidified lard or dripping, maybe even talo would have been used. I'm not too sure on the history of vegetable and plant based oils. Great question! You're right! Solidified fats, such as lard, were common ingredients in early 1900's baking! Occasionally, you'll see a vintage recipe that calls for shortening, which is essentially any fat that is a solid at room temperature! However for this cake, we don't actually use a fat! Vegetable oil was introduced to the US market in the 19th Century and was used in this recipe due to the scarceness and/or expense of animal fats! That said, you can use any neutral oil in this recipe! My in laws couldn't believe this chocolate cake had no milk, butter or eggs in the recipe! In their opinion, it was a really chocolately chocolate cake!! Honestly, it's possibly the best vegan chocolate cake I've ever devoured!! Thanks John!! 😻😻
Vinegar causes the rise as it reacts with the baking soda, and you can’t taste it, but if massively opposed I would try lemon juice. I’ve never tested it so not 100% sure, but it should give the same reaction! 😻
Haha! You can't taste the vinegar in the cake; it just helps the cake to rise (together with the baking soda), as no eggs are used! I hope you'll give it a go! My in laws had no idea it was vegan! They just thought it was a traditional chocolate cake! It's really good! 😻😻

This recipe includes 3 grams of salt - Is it possible you added more salt, or salt instead of sugar?? Happy to help where I can, but I can’t work out why your cake would turn out so salty! 😻😻
If you can put it back in the oven, I'd bake it for another 5 minutes and check with a skewer. If it's still not done, bake for a further 5 minutes. Ovens can vary in temperature and it might be that your oven cooks slightly cooler than indicated. It's always best to check cakes with a skewer. In 99% of cases, this recipe works perfectly! I hope you'll give it another try! 💖😻
