I had found that saving the potato peelings to add with other ingredients to make a stock broth whether chicken, or beef or vegetable or other kind of meat added with spices & seasonings is good.
Could I do this in a stand mixer or a food processor? I have arthritis in my hands wrists and fingers so kneading of any sort isn't possible, thank you Sinead

If you do it in short terms like.. I would need a helping tool, think if you don’t „over-mash“ it.. good luck 🍀 😊
