- Amazing fresh strawberry ice cream. This is perfect for a hot summer day. Packed full of strawberry flavour and so easy to make. Enjoy.
900g (2lbs) Strawberries
400g Sweetened Condensed Milk
1Tblsp Vanilla
2 Cups Heavy Cream
Chop strawberries in food processor until smooth
On medium heat, simmer strawberry mixture for 20 minutes or until volume is reduced by half
Allow to cool then cover tightly with plastic wrap and place in the refrigerator
Whip heavy cream until stiff
Mix strawberry purée with sweetened condensed milk and vanilla with mixer until completely smooth
In two or three parts, fold in the whipped cream until thoroughly mixed
Place in the freezer overnight prior to serving
