I made this stew and it was AMAZING! I made a somewhat modified version bc I was out of clove and nutmeg, but I'll definitely make this again with the added spices

The way you broke open those bell peppers to clean them let me know this stew bout to be nothing to play with 😂😂😂. I always use a knife to slice mine open and then carefully scoop out the seeds then rinse 😂😂🤣. I will be doing this technique from now on 🤣.

This looks so appetising. I do scoop out the oil as well after cooking my stew and use it to make other dishes like soup, moi-moi etc but I found that it's best to use palm oil for those other dishes as it's more tasty and very healthy for heart and brain function.

Mauritian rougaile is a creole dish...but I think it evolved over time.and they stopped using peppers although maybe they use to once upon a time.

Yes, I do normally fry my tomato paste first before adding the steamed tomatoes and it tastes so good.
