- Hi friend! Come along and spend a slow Saturday morning with me. :) I had the morning free from any plans so I decided to take it easy and do things I enjoy. I baked a banana bread and put up Christmas decorations. Can't believe Christmas is in less than two weeks!
In the evening I went to see The Nutcracker ballet with my friends. It made me quite emotional to hear a live orchestra again, I really love classical music so much. ❤

Similar minds.... I also baked a banana "bread". I had some leftover pancake mix and used it with some additional eggs, baking powder, milk, and one over-ripe banana to make a banana bread. I also like to freeze bread because it goes bad so fast. I also like to freeze bagels. Where I live, there is a supermarket that sells pumpkin bagels, but only during November. I usually buy a ton and freeze them so that I can enjoy them throughout winter. Love your decorations.

What a great day you had - and to be finished with an evening at the ballet, such a treat! Whenever I go to the ballet, every time I find myself slightly surprised at being able to hear their feet landing on the stage when they appear to be so light when airborne! The Nutcracker is lovely - and Tchaikovsky wrote the kind of music you just want to dance to. I grew up hearing the music of The Nutcracker and Swan Lake. You must also have loved the experience of hearing a live orchestra play the music - it's so much better live than recorded, I always think. Your flat, by the way, looks quite beautiful and there is understated elegance in your decorations. I think you have been blessed with exquisitely good taste! Thank you for another lovely video, Emmi. One day it would be lovely to hear your voice as well as the well-chosen music you are using at present - even just once or twice. :-)

I soooo feel you! I love to bake too but it is hard when you live alone. I used to bake every week when I lived back home but since I moved to Canada I haven't been able to bake as much (I'm from Brazil). Luckily, I made friends with a Brazilian couple that lives in my building and whenever I bake I give then some, haha. If they ever go on a diet I'll be very sad 😅.
P.s.: I love that you say good luck when putting your creations in the oven 😄.

I am in the same boat as pumpkingirl 1950. I find it so restful to stumble into another person who lives in a cold dark place alone and who is finding ways to be cozy and to take care. Much appreciated. You're the mental evening equivalent of the light therapy that I use to wake up each morning with coffee! I'm Jen from the SoCal San Jacinto Mountains (5300'), where we have just begun to have snow and winter conditions (blessedly far later this year and with an extended and splendid fall).
Also, I live off grid, so I am often without power, water, internet and phone and snowed in. You make this life look so romantic.

You can always slice your banana bread and freeze it. I have never heard of using coffee but can’t wait to try it.

Your breakfast was sunshine on a plate. Some sausage or lean bacon would complete that meal for me. I live alone too and make muffins in paper liners for a few servings only. Small batch recipes are abundant these days due to the number of single people.

Have you tried to freeze your cakes? I usually slice and freeze part of the ones I bake. Then when we want to eat some I take a couple of slices out and let them defrost at room temperature...😁💚
If I bake cookies or cinnamon rolls I usually freeze some so I can have one when I crave it. Haven't really thought of slicing and freezing cake too, that's a great idea! ☺
I agree with Emmi! I'm going to do that. I've already decided to freeze cinnamon rolls and I'm planning to make pulla at some point too, probably in little rolls, so I can freeze them individually. First I have to eat some space into my freezer which is crammed, but that's a great idea madirodi!
This was like watching myself! I live in a cold state in the US. Do you use leavening in the banana bread? I light candles in the morning, drink tea and like that breakfast. Oh, I'd love to go to the ballet. Thank you for sharing this part of your life!

I went to an opera on this past Friday night (12/10/2021). It was titled A Snowy Day. The opera was created from the children’s book with the same title.

I love everything about this video I just wish they were longer ;-) You can always freeze quick breads like this so you do not have to eat them all in one week. I am not sure how big freezers are there ? I never saw a recipe with coffee in it for banana bread but it sounds yummy ! Thanks Emmi

An idea for a fluffy banana bread:
Do not overmix the wet and dry ingredients. If you just fold the dry in the wet but do not over mix them, it becomes less dense but fluffy
I'm going to see The Nutcracker tomorrow! It is on at the Royal Opera House in Covent Garden, London but I couldn't get tickets for a day when I wasn't working. However on Thursday evening they live streamed it to various cinemas around the country. Again I couldn't go due to work, but my nearest cinema recorded it and are showing it again tomorrow lunchtime - tomorrow is my day off, so I booked myself a ticket. I must be one of the few people who hasn't made banana bread, but I haven't been able to work from home as I work in a hospital, maybe I will make it one day.

There is a book called "dessert for two" by Christina Lane, and it has several recipes for brownies, small batch cookies, small pies etc. The point is, you can make a small portion for yourself. I did not see a banana bread recipe. 😑 It did require buying small pans, but I was able to find it online for the recipe I was interested in. It's great for when you have a counter top oven like me. (🤫 I went to book store and took pictures of pages I wanted) Just an idea! Thanks for the video.
