    Here's what you need to make it:
    For the Caramel:
    • Sugar: ½ cup (100 grams)
    • Cream: ⅓ cup (70 grams)
    • Butter: 1 ¾ tbsp. (25 grams)
    • Salt: A pinch (¼ tsp.)
    For the Mousse:
    • Whipping cream: ¾ cup (200 grams)
    • Mascarpone: ½ cup (100 grams)
    As a side note, please don't rush your sugar; it needs to melt slowly until it becomes liquid and amber in color. Then you add the diary ingredients to obtain a smooth caramel sauce that will blow your mind!

    I'm from Sweden and I love caramel, so I'll definitely make this! I'm just scared of melting the sugar because it gets so hot... Scared of fire or me getting burnt. But I guess it's a very small risk for that?

      Just make sure you melt it over low heat, that way you won't burn it and it's pretty manageable. Since you're not stirring (just gently swirling the pot so the unmelted sugar spreads and melts faster), it's hard for you to get burned unless you touch the sugar. The scariest part is when you add the cream, it starts boiling for a couple of seconds and it makes hissing sounds, but it's not that bad. It's scary the first time you make it, then it gets easier and the homemade caramel is just heavenly good! Let me know how it goes ♥
