RECIPE - HOMEMADE ICE CREAM SANDWICHES
1/2 cup butter at room temperature (110 gm )
¼ cup sugar (50 gm)
¼ cup coconut or brown sugar (45 gm)
2 egg yolks
1/2 tsp. vanilla (2.5 ml)
1 cup all purpose flour (140 gm)
1/2 cup cocoa powder
½ tsp. salt (2.5 ml)
2 lbs or 1 Kg good quality ice cream
Preheat oven to 350 degrees F.
Before you start ensure the following: If you want to use ice cream from a small tub , find a loaf pan and figure out the dimensions that your rectangular ice cream slab needs to be. See video for details. I used a pan -7 ½ x 4“ (for 3cookies each 2.5 x 4 rectangles )
Remove ice cream from freezer and store in fridge for an hour or until soft enough to scoop and mould, but not melting. Line your desired pan with parchment paper and scoop ice cream into mould. With spatula smooth out an even 1“ layer. Cover with parchment and refreeze for 1-2 hours until firm. Alternately, just use an ice cream slab and slice the desired size from frozen.
For Cookies: In a bowl, beat together butter and both sugars, until light and fluffy. Scrape down sides. Add egg yolks and vanilla and beat until fully blended.
Sift together flour, cocoa. Stir in salt. Add to butter mixture. Beat on low speed until mixture just comes together. Transfer dough to counter top and gather up and knead very gently until smooth.
Roll gently into log shape. Roll onto parchment paper until 1/8" - 3 mm thick, without flour. Cut another piece of parchment into 7.5“ x 8 “rectangle and lay over top of dough. (this will give you 6 cookies each 2.5 x 4') With knife or pasta cutter, cut the dough to size of top sheet. Gather up the scraps into a ball. Peel off top piece of paper and cut dough into 6 - 2 ½ x 4 inch rectangles. Reserve this paper to trace ice cream later. Do not pull cookies apart. Slide paper with dough onto a baking sheet. Repeat with the remaining dough.
With a fork, pierce holes in cookies. Bake in 350 F still oven in middle rack for about 10-11 minutes, until just beginning to set but not crisp. Remove and let cool completely.
Can be made in advance and stored in a sealed container. Working with 3 cookies bottoms baked side up, lay the slice of ice cream on top of cookies and top with 3 more cookies, with nice side out. Press down gently .Cut through the ice cream , to match the shape of cookies below. You can now gently pull cookies apart. Press gently to secure each sandwich and quickly freeze them, for at least 2 hrs on a tray to set. Wrap in parchment paper.

Yes these are those cookies. If you cook them less, they will be softer and then stored in a covered container will get even softer. I hope this helps.

Sweetlady0512 my pleasure. Yes and how can you not love cookies and ice cream ? They will work though. Make sure your ice cream slab has frozen for a couple of hours before laying it on the cookies. As soon as cookies as cooled , put them in a sealed container so they stay tender and don’t get crisp.

looking forward to making these. found out via the tube that making ice cream is actually pretty easy. it's just sweetened condensed milk and vanilla folded into whipped cream and then frozen. add cocoa for chocolate.

@@somaika delicious! The cookie was perfect - tasted like a dark chocolate brownie. I used vanilla ice cream & since it was Xmas I added a little peppermint extract (3 drops) and swirled in some red food coloring. 🥰

Thickness. You don't need this having mastered the rolling pin, but lots of folks might find it helpful.
Back 15 years ago or so when I was learning Soba noodles, I came up with a cheat.
Two sticks of wood. That's it. I made them the thickness I wanted the soba to be and then used them to limit my rolling pin. I use a traditional American straight pin so it's works prefectly.

Hi Christine, great channel!! I do some gluten free cooking and try to adapt recipes to GF. Have you done any GF dishes and have you ever tried making the cookie GF?
General Lee thanks for watching and for your question. Yes I have made a few GF recipes. Although I haven’t made this particular one it is actually perfect for GF because you don’t need the gluten or texture here. You want it to be tender. So I
Would try it with Bob’s Red Mill GF flour mix. Keeping in mind that I have not tested it. Perhaps you can just try the cookie first to see if it works . I hope this helps.

I was born and raised in Jamaica, West Indies and we call ice cream sandwich suppa duppa ice cream sandwich. One of my favourite ice cream dessert. I don't find them in the UK, only in the USA, Canada and Jamaica, West Indies these are sold.

Sorry for the late response. Yes you always pre-heat your oven. You can also make the dough, then pre-heat oven and then roll and cut your cookies out, to be more energy efficient.

Love this recipe but can you make the dough without cocoa?
A piece of advice- if your like me and nothing works out, if you can’t get it to form into a block without adding a bag of flour as long as it tastes good throw it in (it will take longer to cook so check on it) and you’ll have a dense cake to have with the ice cream. I’m sure you could also add a little baking powder to fluff it up.

I could tell from video this was going to be in the mark. Texture is allots there in my end but was a bit dry cracking. Not nearly as forgiving as yours. Any idea how to bring up the overall moisture or cohesive feel of the dough? More yolk or more butter?

I made a bit of a mistake, i added the dry ingredients before i added the egg and vanilla, will it still work? Or should i quit? Its still crumbly, the dough isnt coming together like yours i added the egg and vanilla while mixing the dry ingredients, im not using a stand mixer im using a spatula and whisk, should i continue to mix it? It coming together but only a little

You can't, I tried and after an hour in the freezer they melted and turned into blood looking mush

What can I use to replace eggs?
I would try either: 2 Tbsp. of aquafaba ( the water from a can of chick peas) or a chia egg ( 1 Tbsp. ground chia seeds mixed with 2 Tbsp. water and let stand for 5 minutes) . Here the egg yolk is adding some richness to the cookie so it should be perfect. I hope this helps and let me know how it turns out. I have made these several times for my mom who Loves them!
