These videos will be played on repeat as I sew along (all by hand 0_0 I don't have a place for my machine yet...). So again thank you! You're welcome! I think it's very important to show that it doesn't always work out the way we had planned, even for those of us who have been doing this for decades.
Honestly, it's just pins. Long, straight, quilting pins. I put several in along the piece I'm working on and move them as I go. It really eases the hand fatigue.

Could you explain your method for attaching the garment to the tailor's ham? It looks like it would really help prevent fatigue in the hands
