Lemon Meringue is one of my favourite desserts. I prefer homemade to shop bought, mainly because it has a fresher zing to the lemon and the meringue isn't as ridiculously sweet as some of the shop bought pies. Great recipe look forward to making this today :)

just asking but your lemon curd seems to be the "lite" version. you didn't add butter to the curd at all. i always do, it makes me feel better. and i like more meringue because that rich curd needs some light airy fluffy meringue to lighten it, but thats just me. Keep up with the good recipes nicko. I've always been your loyal viewer.

I have a static and fan forced oven. For this, I was just using the static option. I have a gas oven btw :) Obviously if you want to use fan forced lower the temp by about 15C

No he asked about baking weights which you put in the pie crust when you prebake the crust. You can either get clay type ones or if you're broke then beans work.

God i'm not a whiny guy but i tried a LOT of your recipes, this one just about an hour ago, and NONE of them worked. I always follow the instruction to the letter and litterally NO ONE worked. I always end up with something that's not even close to what you show in the video, and i'm talking about both the final result, that the frickin things in the process. Want an example? Tonight i ended up with a filling that looked like barfed scrambled eggs and a pastry that was NOT a pastry, but frickin philadelphia. And i repeat: i followed the quantities and the instructions TO THE LETTER. Nicko, wtf!?
Made the mistake of following this recipe instead of his older version for it. This one turned out so bad! I don't know why there are 2 different recipes to make the same thing. #frustrated

No it wouldnt, try using Stevia instead :) The flavour will be so much better than splenda

Instead of pie weights you can use uncooked rice
I suggest you temper your eggs before adding them to the hot mixture... Otherwise you might end up with an omelette.

Technically it would, but not for very long... That's how you get the brown top.

I was a little nervous about that so I put it in at 140C and then turned it up to 160C in the last ten minutes, turned out perfect :)
