Yes I'm 3rd generation hakka in Malaysia And we incorporate pork meat together with shrimp and Spanish mackerel And this meat paste is suitable for many stuffing dishes or even dimsum filling You can also boil some green onion and ginger with some Chinese cooking wine , this "water" can use to substitute the any water that need to be added in to the dish to decrease the fishy smell
You bring so much memories back from my childhood, many more generations of overseas chinese will watch this video. Food is part of our identity I feel.
I love this dish so much. it brings back memories. I can now make this for my parents. I am pretty sad though, the Hakka version of the stuffed tofu, I would usually see them at local chinese spots either in Chinatown or strips of asian restaurants but not a lot of places serve them.. Unless I am not trying hard enough to look for them, is it possible to request a video teaching how to make the deep fried stuffed tofu please?
I love this dish, but preferred it in the fried version. Not deep fried but lightly fried with cornstarch. As for the EFY, if your dad can come up with one that's not soaked in oil, that I'd like to see. Great job Lau family and can't wait for more cooking recipes. Also other considerations are lobster with ginger scallion or black bean sauce, HK style steak with gailan (misspelled), or beef stew noodle soup with wontons and wonton noodles? Cheers!

I am really tired of descriptions of dishes that say that steaming in healthier than frying. This notion comes out of the lie that "fat is always bad." Low-fat diets and aluminum cookware are the reason so many people have developed dementia of one form or another. Your brain is made of fat and requires fat for it continued health. People that actively avoid fat in the name of good health are deluding themselves and will suffer the consequences. The whole "fat is bad" mantra is just one of the myriad lies we've been told by the U.S. government over the last 50+ years. If you take your health cues from them, you cannot help but suffer! Your subscribers deserve better than having you parrot lies at them without thinking. 😕
I've no idea where do you get the idea that fat is bad came from US goverment since it was traditional Eastern dishes that generally avoid frying method. Many Asian countries even had held the belief that steaming and boiling are healthier literally since before US was founded. We do need fat to be healthy, but there's many kind of fats and not every fat/oil is healthy. Too much fat will also cause health problem, most often high cholesterol which also often cause heart problem.
While it's completely true that the idea that "fat is bad" is a myth, it is also true that in many cases deep fried food is less healthy. That's because the types of fat used tend to be refined vegetable oils, which don't have the same health benefits as more "natural" forms of fat, and may come with some health risks. Also, the oil is heated to a high temperature, which tends to make it less healthy too. If you are going to deep fry, animal fats such as tallow & lard are actually a better choice, since they are more heat stable. That said, there's nothing wrong with eating deep fried food, even cooked in vegetable oil, once in a while, but it shouldn't really be something you eat on a very regular basis unless you are sticking to saturated animal fats only, and even then it's probably not ideal as a daily food! So yes, fat definitely isn't "bad", but the type of fat, how it is processed, and how much it is heated, all matter in terms of whether or not it is "healthy". Drizzling extra virgin olive oil on your food before eating it, for instance, is probably highly beneficial to health, whereas deep frying at high temperature in cheap refined vegetable oil probably isn't.
You may have misunderstood the unhealthy meaning of deep-frying. Deep-frying is unhealthy because high temperature is likely to produce carcinogens. Cooking with clean water can at least ensure that no toxic substances will be released

Soft tofu in this dish cuz the texture of shrimp fish mix is chewy. So soft tofu balance it out

Is there a shrimp substitute for this?
Use 100% fish meat. It is actually more common to use 100% fish meat than half shrimp half fish.
