Many years ago, I visited one of my friends, who was an apprentice of cooking at the time. He was practicing the knife skill by cutting potatoes. He prepared exactly the same sliced deep fried potatoes the video shows. It is the best potato slices I ever have. Better than any chips... I feel so lucky.
That knife skills on potato is best one i have seen till date on tape and believe me i watch cooking recipes more then half my time on YT and that composure while creating the dish, WOW. I really dig this chefs vibe.. i don't even know what else to say when my mind is blown by this delicacy🤤❤️

Technically they have two, which look similar but differ in the thickness of the blade. The normal cleaver used to cut pretty much everything has a thin, lighter blade, while the other is a cleaver used for butchering and chopping through bone, which has a thicker, heavier blade.
Well.. it's not easy to handle razor sharp cleaver that is not designed to do specific cuts.. for novice.. most of the time would ended up cutting your own finger nails, or cut too thick.. imagine to handle a not so ergonomic cleaver sharpened to razor sharp to do thin cuts..
I believe it’s the other way around with, except with Betty white. Born in 1922 and sliced bread was invented in 1928, making sliced bread the greatest thing since Betty white. I’m joking, Potato is superior race.

The knife looks like chang kee cleaver with the corners rounded to put a belly on it. It's probably about as sharp as your high end Western or mid range Japanese kitchen knife is gonna get. Now his skills on the other hand... That's something special.

I tried to separate lemon peel from the white pith as Chef John did to make lemon chicken. I gave up and just used my micro plane grater and got the zest that way! Amazing knife skills.

Soak it in salt water and it will not oxidize so fast. Plus you need to add salt for the flavour anyway.
