In the culinary world, we call this egg floss. A shallow fry (the method in the video) is the easiest way to make this. It can also be done by salting the eggs before beating, adding a small amount of acid (usually a mild vinegar or some lemon juice) and then sautéing over a lower temperature with far less oil. The salt and acid accomplish the same goal as the high temperature oil. They dehydrate the egg yolk and cause the proteins to cluster together in the white. If it's stirred consistently and the stream of egg into the pan is broken by either stirring or intermittently pouring, the results will be similar.
Yes and some westerners call this thing unhealthy, says the ones who eat foie gras or chicken liver pate. Every culture have their own unhealthy things, stop picking on asians, we dont complain about no cadbury candy bar or kit kat that westerners introduced to asian culture, so why westerners like to complain about how food is cooked here.
