Lard pie crust is the best of all time. My mother (from the mid-west) would never have Crisco in the house. The flakiest crust with lots of compliments! But we all do what we do !

Ruth! Great episode and I own your fabulous book. May I suggest that you flatten your pie dough into a 6” round disk before freezing. Later it makes rolling the dough much easier.
I literally watch the episodes with Ruth in them three or four times! Love her! I also have your book Ruth and every time you make a new recipe, not in the book, I write it down on a sticky note and put it in the book. I have not found a recipe from Ruth that I did not love.
You have inspired me to make both pies for our Canadian thanksgiving coming up .. I too have your fabulous book .the barn looks soooooo good and the Japanese anemone are my favourite too ..thank u for sharing

I love making pies and come from a long line of pie bakers and am passing it on to my daughters. We all have our own way of doing things and I’m sure yours were delicious. I’m going to try your apple recipe. I just love warm apple pie. Also pumpkin. Hope the wedding goes well. Four of mine are married 1 to go now soon the grands might start. It’s such a joyful occasion if started in the Lord.

Use your knuckles to flute the pie crust edge. My mother was the pie maker for a major restaurant chain back in the 50's. She taught me, and now, that craft is a treasure, as I no longer have my sweet mother.

Ruth - how do you handle heat and cooling in the barn, fireplace for heat only? We have a beautiful barn as well in Southern PA and would love to use it more.
Very mixed thoughts on this episode even though the recipes themselves look yummy. If you are going to teach someone to make a pie then why not make an effort to teach some basic techniques to give them the tools to be successful starting with not having them try to roll out dough that hasn't been chilled? I honestly felt sorry and a little bit embarrassed for the poor sap daughter struggling with no guidance other than the BS of making a 'rustic pie'? There is technique to rolling, crimping, transferring dough etc. as Ruth well knows imo and not sure why she didn't want to impart her knowledge to her daughter? To just leave her to fend for herself with absolute inexperience, zero standards and warm dough is honestly just plain mean and unhelpful imo. No wonder more people don't attempt to make pies if this is what passes for 'teaching' someone what to do! Do better Ruth!

'Crisco' is vegetable fat also marketed as Kremelta for those of us in the southern hemisphere. I wouldn't have thought of adding it to a pie crust!

The absolute best pumpkin pie recipe comes from an old McCall’s cookbook and includes cinnamon, ginger, cloves, nutmeg and allspice AND MOLASSES.
