  • In the heart of Kolkata, on the river bank of the Ganges, lies the potters’ enclave. Within this heritage neighbourhood, each street is filled with over 300 years of history, where artisans and labourers work around the clock, making religious clay idols or driving the cottage industry of garment factories.
    That’s where our talented cooks come in, the food entrepreneurs feeding this workforce 24/7. They know how to turn mealtimes into a business opportunity, by selling affordable and authentic food that’s delicious and doesn’t burn a hole in your pocket.
    Discover the quick and tasty staples they make, using humble local ingredients like potatoes, yellow peas and asafoetida with unique Bengali influences, to create aromatic and delectable dishes that cater to the local palate.

    People look at these slum like conditions and have a perception that people are unhappy. But just look at these two guys, early to rise, doing what they love and serving the community.
    Its so difficult to find this unity in community. There's something magical about this kind of life. Simplicity. Contentedness. And Purposefullness.

    There's something in the shots. This episode looks so much better, even more so than the previous ones. The team has caught the vibe very well! One thing to note is that the Kochuri seller had the whole root of hing! Previously, afghans used to sell it in Kolkata back in the colonial days, but now it comes in dust, store-bought form! I'm guessing this root paste is gonna taste much better.

    • @ocs748
      @ocs748 Год назад +10

      Solid hing is available through out the country, but people prefer the powdered form for ease of use. Handling solid hing with fingers leaves a lingering aroma which does not go even when washed with soap.

    This reminds me of my college days in Liluah Howrah. Similar small old shop of kochuri and aloo sabji shop was there in Belur .. the old man had the magic …😢 now I’m too far from that land .. I wish someday I’ll go there and have a plate of kochuri there 😊

    I dont understand why it is indicated as slum.. Slums r meant to be poor, unhygienic, unhealthy environment to live in.. If anything this is a village or even a town... Dont go about giving false impressions about places

      I rejected my promotion to Bangalore because I just want to stay close to my family and never wanna leave my city even if I don't get richer. I'd rather die here with my family by my side instead of dying on the pyre of wealth far away from my close ones.

    Great job CNA for highlighting the real Calcutta. With time such small eateries/shacks are disappearing due to government crackdown to improve the aesthetic looks of the ever developing metropolis.

    The guy selling yellow pea curry is a 'priest' caste, allegedly called 'upper caste'. I see so many people judging others from India based on 'caste' in my university, kind of stupid to umbrella everyone based on the shallow knowledge or biased news you hear via internet.

    • @Kathakathan11
      @Kathakathan11 Год назад +7

      I am not from priest class, but the reverse casteism they are facing is tremendous. Shamed for what their ancestors did and even not given equal opportunity. And they despite that clear exams with more marks than us. And yet are slammed to wear their traditional symbols. Or even bashed for their name, they didn’t choose for themselves.
      My friend left India because of that, only to be attacked in USA. Like blacks have completely attacked whites, even the progressive whites feel sorry for their skin colour, similar is the condition of upper castes in India.
      In struggle for equality, we lower castes are on the path of revenge.
      I cannot lose my friend, who never made me feel different. But I am targeted by my fellow caste mates, even some liberal upper caste people who tell me that I am discriminated. I sometimes don’t wish to have children in this terrible world, where justice is overlooked and revenge is sought out.
